So now for the Blend Retreat Part #2.

The hike was my favorite activity. I looked forward to doing it from the moment I signed up for the Retreat. This hike was legit, it very challenging and the terrain was rocky. Then add the altitude and the elevation and there you have the 4 mile Flat Irons Hike.

My heart was pounding out of chest within the first few minutes of the hike, I was feeling really out of breath from the altitude, so I adjusted my pace so I could enjoy the hike and the scenery. But you really had to keep your eyes on the path, it was a very rocky path once you got off the main trail leading up the hill.

Stopping to take a picture with Katie was a great way for me to catch my breath.

It was so cool to see the line of bloggers making their way up the mountain.

Felt like I was on a stair stepper for most of the hike. There were portions of the hike that these short little legs had to really stretch out and up to get up on a rock, but that was the best part of the hike, I love a challenge.

The trail winded up and around and sometimes seemed to get quite narrow.

Again, stopping to take pictures helps one catch their breath.

Along the way we were greeted by this little hiker, Bella. She was so cute, and seemed to hike effortlessly.

On the hike I found myself with different groups of bloggers/hikers along the way. Kim and Meghan were great company.

At the Sentinel Pass I found Tiffany, and from there we hiked the entire way back down the hill together.

The landscape is so amazing in Boulder, it’s picture perfect. I swear it was like looking at a postcard.

Loved all the boulders in Boulder. I love rocks, I love taking pictures of rocks, clearly.

Post hike protein shakes provided by Core Power. I needed fuel after that hike and the vanilla shake hit the spot, it was very taste. It was real milk protein designed for post workout recovery. Recovery is just what I needed.

After the hike we cleaned up and headed out to lunch. We went to lunch at the Mountain Sun Brewery and Restaurant.

Mountain Sun had so many beers to choose from, and I was not sure what to order so I was given a sample, but unfortunately another side effect from the high altitude is alcohol can go straight to your head, and after just the sample glass I realized alcohol was not a good idea for me, so I went back to water. I think I drank gallons of water over the week-end. The shuttle bus driver told me it was a great way to help ease altitude sickness when I first arrived in Boulder, so I took his advice and chugged. I was bummed out that I could not sample a few different beer flavors, I love me a nice cold beer.

Beers, beers and more beers, I did not get to drink.

Lunch was a blackened shrimp and blue cheese wrap with a side salad, it was so good. After lunch I headed back to my cottage and took a nap, I was tired.

When I woke up I wanted a snack so I looked in my swag band and found some popchips. Can I just say this, I am in love with popchips, they have so much flavor. They are all natural popped snacks. I had several different flavors at the retreat, but I think the Jalapeno and the chili lime are my absolute favorites. Spicy, tangy and crispy. Perfection. I love it when I find a really good healthy snack.

Zesty also comes to mind.

Most of the girls went back out for dinner and drinks later in the evening, but I stayed back and relaxed on the back porch and had some more snacks from my swag bag. I called my husband and took a long hot shower. I went to bed early in anticipation of the Boot Camp that we were having bright and early on Sunday morning.

Putting my feet up is all I wanted to do.

Sunday morning Boot Camp was led by Tiffany at Chobani Fit, she kicked our butt’s, plus it’s 7am and it’s cold.

She was very good at motivating us, she really got my pumped up and ready for a great workout.

No excuses here, these girls are tuff and a little cold and an early start time can not stop them.

Learned a new stretch called the Pigeon Pose. Where have I been, this stretch was perfect for my tight hips.

After the workout we all headed to breakfast which was sponsored by Chobani. I had the pineapple yogurt with some simply oats Love Grown granola. Talk about a perfect combination.

Then came the Closing Ceremony and Raffle. Which made me super sad because I knew that this was our last activity and that we would all be going home soon.

I was super excited when I won the Nature Box Raffle. This entitles me to one month’s worth of healthy snacks. So looking forward to getting this package in the mail.

After the photo it was time to checkout of our cottage.

A bunch of us meet outside the main lodge and waited for our taxi’s and shuttle bus.

Last minute hugs and goodbyes were everywhere.

I made my way to the airport and had my gopicnic in the laptop/cell phone charging station area.

This lunchbox has all my favorites.

Hummus and crackers always make me happy.

I am really looking forward to Blend 2013. Our hosts were amazing, the swag was stellar and company was outstanding.

So this past week-end I attended the Blend Retreat. It was the highlight of my year so far. I had an amazing time. I met so many amazing ladies. It was really fun being a part of the First Annual Blend Retreat.

It was held in Boulder Colorado at Chautauqua Park.

I had great roommates, Katie at Talk Less, Say More and Amanda at Diary of a Semi-Health Nut.

We had this super cute cottage.

All the rooms were cozy and rustic.

  

Then there was the view off the back porch.

Once I arrived I was greeted by our hosts Lindsay, Katie and Janetha.

Also received my Big Bag of Swag. There was some really Amazing stuff in this bag. I think I will dedicate a post to the swag bag. I really want to cover all the goodies we received. There are some very generous companies that showed us bloggers some serious love and I’d like to do the same in return for them.

After we settled in to our cabin and got to know one another a bit, we headed to the dining hall for a meet and greet cocktail hour followed by dinner and dessert. This gave us an opportunity meet fellow bloggers.

  

The table was loaded with some of my favorite bloggers.

Had some cupcakes from Street Fare.

They were so beautiful and taste.

There was a mad rush for the cupcakes when dinner was over, we each got to choose 3 mini cupcakes, I choose the Raspberry Lavender, S’mor, and Peanut Butter Pretzel. Absolutely loved the Raspberry Lavender.

Saturday morning at 7am, we had Boot Camp.

I was really excited to meet my Best Body Boot Camp instructor Tina.

Yesterday was a really big day for me, I pulled out the grill, and I had a blast Getting My Grill On. I really missed my grill over the long winter, it is the only grill that I have ever been brave enough to start on my own. Let me explain, I had an incident when I was 16 years old lighting a grill. I made the mistake of having my face to close to the grill and as I dropped the match to light the flame and it sent a puff of flame straight up at me, and I ended up singeing my bangs and my eyebrows.  I have been afraid of grills ever since, but that all changed with a new grill purchase last spring.

Greek food is a favorite of mine and I just love Chicken Gyros. I really love the fresh flavors from the cucumber and yogurt sauce that is called Tzatziki.

I Grilled up some broccoli. That is my favorite way to prepare my vegetables during grilling season. I just make sure I toss the veggie with olive oil and use cooking spray on the pan I am using to prevent the vegetables from burning or drying out.

Here’s my Grill, she’s a beauty, I just love her. It’s so nice to have an electric start on a grill, nothing to light, no way to singe your hair, and it’s a perfect size, with 2 shelves.

Perfect for grilling your veggies and cooking your meal at the same time. I have even cooked french fries on the top rack using my toaster oven tray. We had a power outage last year for over a week (in August) and I made all our meals on the grill. It was fun and I looked at it as an adventure and I found that I learned so much about cooking that week. I really got creative.

Made a Simple Tzatziki Sauce.

  • 1/2 – Cucumber deseeded, and Chopped
  • 1 – Small Container Plain Greek Yogurt
  • Diced Garlic to Taste
  • Processed in a Food Processor until Incorporated

It came out smooth and creamy. I love the slight bitter flavor you get from the yogurt. I think you could put this on anything, I am going to use my left over sauce as a salad dressing. I will let you know.

Once the chicken is done grilling I let it rest for about 3 minutes then slice and dice into strips or chunks.

The broccoli cooked the entire time the chicken did and it was done perfectly. I kept the grill on medium the entire time.

Once I took off the chicken and broccoli I put the flat bread on the top rack for a minute on each side to warm.

Loaded the pita up with chicken, spooned on some of the Tzatziki sauce and topped with some feta cheese. I only wish I had some tomatoes to top it off with.

It was a really easy meal to make and I had a good time Getting My Grill On. Plus I am all for the easy cleanup in the kitchen, which leaves me with more time to spend with my guys.

BEST BODY BOOTCAMP

Boot Camp Update: Feeling really sore today and in lots of places. Upper chest is sore, hamstrings are really sore and my inner thighs are super sore. So I have been trying to get up from my desk and stretch throughout the day.

Plank Club Update: Had a set back this week in my Planking time, for some reason I have not been able to hold a Plank longer than 35 seconds, so I have been doing several throughout the day. It’s a work in progress.

I’m attending Blend Retreat 2012.

I can Barley Contain Myself. Sorry, sometimes wordplay makes me think I’m clever. Well anyway I made a great batch of Barley as a side dish for our dinner and I have to say it really has a unique flavor. I have had barley in soup and mixed in with other grains, but I have never had it alone, so I was excited to try it out.

1 cup of barley to 3 cups of water with a vegetable broth packet for a little added flavor. Bring to a boil and simmer for 50 minutes.

This little grains packs 6 grams of fiber and 4 grams of protein in each serving which is 1 cup.

Barley really plumps up, so 1 cup of raw barley is more than enough to make 2 large servings.

They come out chewy and nutty. I love the texture of this grain, so hearty and filling.

we also had Sweet Potato Discs drizzled with olive oil and seasoned with salt. Baked at 400 degrees for 40 minutes or until crispy on the edges.

Made a basic baked pork chop, breaded in Panko bread crumbs and seasoned with garlic salt’s, I used liquid egg whites for the egg wash. Just a nice and light breading.

Pan fried for 5 minutes to brown the meat, then baked in the oven on 400 degrees for 40 minutes, I baked the Sweet Potato Discs and Pork Chops together.

This meal made my husband very happy, he loves a good chop. I am not vegetarian, but I do prefer a plant-based diet. It seems like I eat meat less and less and when I do I am always wishing I had a second vegetable on my plate instead of the meat.

For dessert I thawed a few Protein Pumpkin Cookies. I love these little babies, they really satisfy a sweet tooth.

Just after eating the cookies I noticed this lone pear that needed to be eaten tonight or I’d be feeding it to the Lovely Ladies on the Farm. So I sliced it up and Jeff and I ate that also.

This pear was super ripe and was super juicy. I loved every single bite.

When I took my first bite, I told my husband it was Peeaarrfect! He responded, “Your such a dork.” He could Barley stand my comedic genius.

BEST BODY BOOTCAMP

Boot Camp is rolling on, even on vacation I made Boot Camp work for me, I was only gone 4 days and my friend’s apartment had a very nice gym. So before the day got started I would dash to the gym and complete a workout. I put the workouts on large index cards and laminated them so I would have them handy on my trip. Plus Tina has the program set up to be flexible.

On top of the workout’s I also got lots of extra cardio, we walked a few miles on the Allure Cruise Ship Tour, and we swan and went fishing. The fishing was a really big core and arm workout, the waves were rolling so anytime you stood up to reel in your catch you really engaged your core. Well I count it as extra!

Plank Club is going strong, I even got my friends and husband to do them with me, it was really fun. I managed to hold my Plank for 55 seconds each day, so I am happy to be holding steady, but I hope to make a break through any day now. I love how my husband can take months off from working out and just jump in and kill it. If I take anytime off from working out I lose strength.

BEST BODY BOOTCAMP

Boot Camp Update, I am really getting into this, I am looking forward to what comes next, not to say that when I’m done, I’m not exhausted, starving and a bit sore, I am, but first and foremost I am doing it and having fun. I increased my hand weights this week on a few of the exercises.

Work has been crazy for me lately, I have had to work 10 plus hours extra this week alone, but I have made my workouts a priority. I tried to make a few meals in advance so that I could save time on the nights our Boot Camp took me longer to complete. Monday was a hectic day for me, I worked late, got home, I made my husband dinner, went and worked out, prepped my breakfast and lunch for the next day, then I finally sat down to eat my dinner at 7:30pm, but it was worth it. I took care of everyone including my self, and I didn’t make Any Excuses.

I had a nice glass of this Silk fruit and protein smoothie after my workout, it was just what I needed to give me a little boost. I loved the mango flavor, it was really taste.

Plank Club, I rocked a  50 second plank. That is a really good time for me, I am working on improving that time, but I am really happy starting with that as a base line, just 6 short months ago during a yoga class I could barely hole 30 seconds without violently shaking.

Dinner was one that I could put together in about 15 minutes, I love taco’s and I love shrimp, so we had Shrimp Taco’s.

Quick and easy was the theme here.

 

One of my favorite taco topping is guacamole and the little wholly guacamole packs are the best to just squeeze on. Plus they can be kept in the freezer and they thaw in minutes in a bowl of water, so I always have them on hand.

I know refried beans are not the prettiest to photograph, but I love them.

I am venturing out on a Lunch Quest.

Habit and convenience are the two reasons I tend to eat the same lunches during the week. I like to keep certain items on hand that are healthy and easy to eat at my desk.  But I have to admit, I am getting bored with eating my same old, same old bag lunch. I have been craving green salads, but I like mine loaded up or I tend to get hungry not long after eating. I wanted to try out this salad in advance to see if I would be able to adapt it for a during the week “take away” shrimp salad.

Avocado Shrimp Salad

I sautéed the shrimp in Extra Virgin Coconut Oil and seasoned with white cooking wine, lemon juice, paprika and chives.

They cook up so fast, they only need a few minutes of cooking time. They get really tough if they are overcooked.

I chopped up an avocado and sprinkled with lemon juice to keep its color.

I did not add any dressing to this salad, just some lemon juice and I mixed up the avocado really well. It coated all the leaves and really added a creaminess like a dressing would.

Here’s my thought on the salad, it was perfect to make and to eat at home, but I don’t think I’ll take this to work with me, the avocado cut in advance would get too brown and everything would have to be packed separate and then added together at my desk, so it really would not be the most convenient, plus I would worry that the shrimp would lose its freshness.

So this is a keeper when made at home for when I want to eat it for that meal, but the quest for something different for lunch continues on, I might have found a great new salad, but my quest is not complete.

In today’s Boot Camp news, we start week #2 and I am ready to go, I am able to do all the workouts on the day’s as they are listed and I have chosen a new goal. I am going to be keeping my in Bed By 11p.m. for Goal #1, because I really need to develop better sleeping habits, but this week I decided to go with Using a Foam Roller after each workout as my #2 Goal.

BEST BODY BOOTCAMP

One of my main focuses for this weeks workouts is to really concentrate on the muscles that I am working. I want to really focus on breathing, tempo and form.  I have noticed that I hold my breath on excretion and push too fast through the exercise. I have enlisted the help of my husband this week also, I asked him to make sure I am keeping my form when I do the sets. He pointed out a few things for me last week and I really liked having a spotter. He kept asking me during the Crab Walk “Is your Butt suppose to be dragging like that?”  So I would start over and keep my tush up. I think he should have been a coach, he has a really good attention to detail kind of mind, plus he’s a great motivator, i’d shout out “tell me I can do it”  in my I don’t think I can voice, and he would jump up and cheer me on! He’s so cool.

There’s just something about the weekend, I love the time I get to relax and make breakfast and just sit and talk with my husband. Unlike the typical breakfast during the week, where I eat at my desk at work. I was a bit undecided on what I wanted for breakfast, I thought I wanted Van’s French Toast Sticks while my husband wanted eggs. So I grabbed everything to make both and realized that I wanted eggs also. So back in the freezer went the French Toast Sticks.

It was a good call, I had 2 eggs scrambled with imitation crab meat and shredded cheese and just a splash of milk. My husband had 3 eggs with ham and shredded cheese and a splash of milk.

 

Multi-tasking is a must when you want to eat different ingredients and want to eat at the same time!

Now that I had my eggs, I can’t seem to get the French Toast Sticks off my mind. I just might need to think about having them as a snack later.

That’s how you Kick it Saturday Style. Eggs two ways or His and hers if you like.

Now that I am full and fueled I plan on getting to the planning of my day. Today is Cardio of choice with my Boot Camp Program, so I have a treadmill power walk planned.

BEST BODY BOOTCAMP

Tomorrow I get my first Rest Day from Boot Camp, I am very proud that I have followed the program and stayed on point. During the program we have in addition to the Workouts two goals that we give ourselves, I only had one day that I did not meet my goal.  I knew that the goal of getting myself to bed by 11 pm was going to be hard, but I really want to start forming better sleeping patterns.

Last night Jeff and I went to a Red Wings Game, our 3rd. this season! We had a blast, but I was so worried we would get home late and I would miss my Bedtime Goal, but I made it home and into bed by 10:56 pm.

And the Red Wings won 4-3! The last game we attended was in February where the Red Wings made sports history by winning 23 Home Games during a season, now that was a happy crowd.

It was a great game, I love watching live sporting events, the crowd always pumps me up. Plus I really love hockey, growing up my brothers played hockey and my father was a hockey coach, my mom volunteered at the concession stand, we were always at the Ice Arena as a family, we called ourselves  “Rink Ratt’s.” My contribution was to organize cheering sections. I really took it serious, I made up dances, I had moves, those are some of my favorite memories from growing up.

Also I wanted to pass on that the Blend Retreat still has tickets available. It is open to bloggers and readers. This is the first annual BLEND Retreat and it is being held May 4th-6th in Boulder, Colorado at the historic Chautauqua Park.

BEST BODY BOOTCAMP

Best Body Boot Camp Update: 1st. off I have learned that I can push past the pain. 2nd. I look forward to working out. Pushing past the pain has been easier than I thought. I had some serious thigh burning the first few minutes of my elliptical workout today, but once I got past the burn I found myself having more energy and ability to adapt to the changing intervals with ease. I have also found that I look forward to what I will get to try next, I mean not in a million years would I ever have thought that I would be doing some of these exercises, they always seems too advance for me, but when I am able to do them, and complete the set it just helps me build my confidence and lose the phrase “I can’t do that”.

Now on to something sweet. There are times when we all find a recipe that immediately you know I have to make that, well here’s one such recipe for Avocado Chocolate Pudding that I adapted from That’s so Michelle.  I knew that if my husband saw me making this he would taste it with hesitation or maybe prejudge what it would taste like, so I made it while he was working out. My husband loves food and he really is not picky at all, but I wanted him to eat the pudding and tell me how he liked it before I told him what was in it. I just love to show him that you can add goodness to any meal, snack and dessert.

Avocado Chocolate Pudding 

It was weird to see avocado and peanut butter in a bowl together.

I was excited to get to try out Swanson Organic Cocoa Powder in a recipe that would really feature it. I just love that fact that there is NO sugar added to it and it has a smooth cocoa flavor.

Finding way to incorporate coconut oil into my diet has not been hard, I love this stuff and it really is easy to find ways to use it.  Check out this link for reasons why coconut oil is so amazing.

Mix it all together in a bowl and use your hand mixer until smooth.

This batch made  4 really nice size servings. I added chocolate chips for a little crunch.

So here’s the reaction from my husband. He loved it. Which I knew he would. So I then told him what was in it. The only thing he said was “You Put What in My Pudding?” It was so funny, he really didn’t care what was in it because it tasted like Chocolate Pudding.

Ingredients  (Serves 4)

1 Ripe Avocado
1/4 Cup Creamy Peanut Butter
2 Tablespoons Cocoa Powder
1 Tablespoon Coconut Oil
6 Packets of Truvia or 1/4 Cup sugar
1/4 cup Agave Nectar
1/2 Teaspoon Vanilla
Dash of Salt

Place all ingredients in a large bowl and mix with a hand mixer until creamy and smooth and serve.

Using my Target gift card was not a problem for me. I finally found a Foam Roller. I hope that combined with stretching, this roller will really help me with my soreness after workouts.

Getting sore muscles is something I am use to. I tend to get sore from any weights workout or long cardio session. The problem is how long the pain lasts. I have had soreness and pain from a workout for 3-4 days after a workout and up to a week if the workout was strenuous. I always stretch before and after and could never fiqure out why I was so sore and the person I worked out with had no soreness at all.

My doctor told me that I build up to much lactic acid and that causes soreness, but that normally should only lasts 24-48 hours. He thinks what I experience after a strenuous workout is called Delayed Onset Muscle Soreness or DOMS. There have been times I have had severe muscle tenderness as well as loss of strength and range of motion, just from doing 3 sets of Straight Leg Deadlift with a 8 pound weight bar.

To be honest this all goes along with my I am Strong post. Part of the reason I never challenged my lower body strength was the way a big workout made me feel. I assumed that the pain was just a sign of my own weakness

So now I am armed with information,  I plan on continuing to increase my workouts gradually with reps and weights. I plan on stretching and using the foam roller. I hear an epsom salt bath after an intense workout help, so why not, I love a good soak.

Using a Foam Roller After Exercise May Help Reduce Soreness

One technique used with some success to reduce muscle soreness is to use a foam roller regularly as a part of a cool down. This will be particularly helpful after a long, high intensity workout or cardio session, especially after the start of a new type of exercise or a new weight training routine.

Foam rollers also offer many of the same benefits as a sports massage, without the big price tag.

The foam roller not only stretches muscles and tendons but it also breaks down soft tissue adhesion’s and scar tissue. By using your own body weight and a cylindrical foam roller you can perform a self-massage or myofascial release, break up trigger points, and soothe tight fascia while increasing blood flow and circulation to the soft tissues.

How It Works

The superficial fascia is a soft connective tissue located just below the skin. It wraps and connects the muscles, bones, nerves and blood vessels of the body. Together, muscle and fascia make up what is called the myofascia system. For various reasons including disuse, not enough stretching, or injuries, the fascia and the underlying muscle tissue can become stuck together. This is called an adhesion and it results in restricted muscle movement. It also causes pain, soreness and reduced flexibility or range of motion.

So I am looking forward to seeing if using the foam roller helps reduce my soreness. I plan on getting my Rolling On!

Lately I have been eating lots of salads, spinach has been my leaf of choice. Today’s was nothing fancy, just feta cheese, carrots, cucumbers and topped with a hard boiled egg. I use salad dressing sparingly, I prefer it light so I can savor the flavor from the feta cheese and the egg.

So I’m off to do this workout and then use my foam roller. The roller also included a DVD with a stretching routine, so I want to preview that also.

Well the walking belt on my treadmill has taken a hit, it has been wearing out for sometime now, but I have been ignoring it, and didn’t realize how damaged it really was. This treadmill is an older model, but the motor works great so I found a replacement belt online and I ordered it, and should expect it in about 3-5 working days. So I will be getting all my cardio via my elliptical rider until then.

Wearing my headphones and rock’in out while power walking, I didn’t really hear the warning noises it was giving off, until the noise got louder than my music.

The last hint was this terrible burning smell that started.

So I jumped off the treadmill and got on my elliptical rider and did a 40 minute resistance workout.

To be honest I’m really getting in a good rhythm on the elliptical lately. Since I started to challenge my self to adding resistance, I cannot believe how fast the workouts have been going by. Plus I can tell my legs have gotten stronger.

After my cardio I got on some circuit training,  I did the following .

LEAN LEG PYRAMID

  • 20 Squats
  • 30 Lunges
  • 40 Toe Touches (head forward, legs straight, bend down & touch your toes)
  • 50 Second wall sit (sit up against a wall, legs at 90 degrees and hold it!)
  • 100 Seconds Jumping Jacks
  • 50 Second Wall Sit
  • 40 Toe Touches
  • 30 Lunges
  • 20 Squats

Next was the LEAN ABS PYRAMID

  • 10 Standing Knee Raises
  • 20 Tummy Tucks
  • 30 Second Plank Jacks (on your hands in a plan, jack your legs out & in)
  • 40 Crunches
  • 50 Bicycle Crunches
  • 40 Crunches
  • 30 Second Plank Jacks (on your hands in a plan, jack your legs out & in)
  • 20 Tummy Tucks
  • 10 Standing Knee Raises
Today I made a Saturday morning favorite, Eggtastic English Muffin.

Using my Pampered Chef measuring/storage jars I microwaved the first egg for a total of 2 minutes, but the problem is if you’re not careful the egg will explode in the microwave, so after 30 seconds I stop the cooking and let it rest and poke the egg. Then continue until it looks firm. The second egg only took a minute and 30 seconds to cook, so the cooking time’s do vary and you really have to watch the egg the entire cook time.

It was eggtastic.
