Pumpkin Millet Muffins
These muffins offer an intriguing crunch. Savor them warm from the oven, or freeze a batch to have on hand.

1/2 cup millet
-
1 egg
-
1/2 cup Greek yogurt
-
1/2 cup soy or coconut milk
-
1/2 cup unsweetened applesauce (to replace butter)
-
1 cup canned pumpkin puree
-
8 packets Splenda
-
1/3 cup light brown sugar, packed
-
1 cup all-purpose flour
-
1 cup whole wheat pastry flour
-
1 teaspoon baking powder
-
1/2 teaspoon baking soda
-
1/2 teaspoon salt
-
1/2 teaspoon ground cinnamon
-
1/4 teaspoon ground nutmeg
-
1/4 teaspoon ground cloves
Preheat oven to 400°F.
- Place paper liners in a 12-cup muffin pan; set aside.
- Heat a large skillet over medium high heat. Add millet and toast, stirring occasionally, until golden brown and just beginning to pop, 3 to 4 minutes. Transfer millet to a plate to cool.
- In a large bowl, whisk together eggs, Greek yogurt, soy milk, applesauce (to replace butter), pumpkin, Splenda packets and brown sugar; set aside.
- Whisk together flours, baking powder, baking soda, salt, cinnamon, nutmeg, cloves and cooled millet in a medium bowl, then gently fold into egg mixture until just combined.
- Spoon batter into lined muffin tins and bake until a toothpick inserted in the center of the muffins comes out clean, 22 to 25 minutes.
- Allow muffins to cool in pan for 5 minutes, then transfer to a cooling rack.
* Allow muffins to cool completely before transferring to freezer bags. Thawed muffins may be reheated in a 300°F oven for 10 minutes or microwaved for 15-20 seconds to give them a little warmth.

Kale Fruit Smoothie
Power up your morning smoothie with superfoods like kale, spinach and flax seed.

-
1 cup So Delicious coconut milk
-
1 scoop protein powder
-
1 handful kale
-
1 handful spinach
-
1/2 fresh or frozen banana
-
1 handful fresh or frozen blueberries
-
1 tablespoon milled flax seed
-
1 tablespoon coconut oil
Blend all ingredients for about 1 minute, pour into a large glass and enjoy!
Note: If you use all fresh fruits instead of frozen, add a few ice cubes.

40 Fit in The Mitt

On my blog I love to share easy, healthy and satisfying recipes along with fun workouts and tips on staying fit. I look forward to my daily workouts which include yoga, power walking, weight lifting, circuit training and hiking Michigan’s trails. Some of the other hobbies I enjoy blogging about are baking, gardening, scrap booking, and riding my Harley Sportster 883. My husband and I love to travel, fish and go out on our pontoon boat with our dogs Killian and Stuart.
One of the greatest rewards that comes from being a reader and having a blog in the Healthy Living Community is the inspiration, support, advice and motivation that it provides. When I think of what fit means to me well that’s easy, do what you love, see the world, eat good food, exercise your mind and body and have as much fun as possible. My health and fitness philosophy is this: I’m in training for a full and active life fueled by good food, fitness and fun.

I love today’s post from Dena at 40 Fit in the Mitt because it addresses a place we’ve ALL been before, a place where a lot of us still find ourselves. We’re talking building an audience: I personally believe that this is something that bloggers should NEVER stop working to improve – after all, relationships made through blogging are THE BOMB! and one major way we connect is through reading & responding to one another’s posts! Ok, Ok, enough from me – Dena’s got this subject covered….
Hello Healthy Living Bloggers, my name is Dena and I blog over at 40 Fit in the Mitt. I started blogging in January 2012. However I have been reading Healthy Living Blogs blogs for a few years now. When I first started my blog I was unsure of what I was doing as far as the technical/technology side was concerned. The content was all inside me ready to pour out. Here’s what I knew, I loved reading Healthy Living blogs and I wanted to share my passion with like-minded bloggers and readers.
We all want readers and other bloggers to enjoy our posts and build a dialog with them. So along my short journey I have found a few tips on blogging that really helped me build and audience and some amazing friendships with readers and HLB Bloggers.
First off I wanted the building of my blog to be fun, have useful content, and show my personality. The next step was to find readers with similar interests. Here’s some of the steps I used:
- Tag your Posts, Google Searches Bring Traffic1
- Take Pictures, We all Love Pictures2
- Be Consistent with Your Posts
- Be Visible, Comment on other Bloggers Posts3
- Do Guest Posts on other Bloggers Sites
- Ask Bloggers to do Guest Posts on your Site
- Ask Questions at the End of your Post, Encourage Readers to Leave Comments
- Comment Back, Have Fun, Have Conversations
- Join Groups and Communities. Boot Camps, Group Posts, Foodie Pen Pals, are Great ways to Bringing Traffic to Your Site
- Get Active on Social Media Sites, Pinterest, Facebook,and Twitter are my Favorite Sites
- Do a Greatest Hits Post, Link up Like Posts with Like Posts
- Reach out to Companies for Giveaways, Readers and Bloggers Love Giveaways
- Attend Retreats and Bloggers Meet-Up’s if Possible
- Always Link back to the Author if you are using a Recipe or a Work-out from another Blogger Site, Always be Courteous4
The most important tip I can give on blogging is this, have fun. Blogging is a job for some, but for most, we are all here to enjoy some good fellowship, share recipes and workout ideas. The HLB community is amazing, so much support and advice is offered, take advantage of it.
I know this is probably old news to some, but we all need to go back to the basics every now and then. It has been a joy and a pleasure to have Guest Posted here today. Your friend in Healthy Living, Dena
