It’s Reveal Day, Happy Foodie Pen Pal Day!

So just a quick note about the Foodie Pen Pal Program. I just want to start by saying that ANYONE can join in the Foodie Pen Pal Program, it is open to readers and bloggers. It’s so much fun, you meet so many great people and get some really tasty food and snacks. For more information about the Foodie Pen Pal Program, please see the end of this post. Okay, now on to the Reveal.

I took a few months off from the Foodie Pen Pal Program over the holidays, I knew I just could not commit to adding one more thing to my to-do list, but as soon as my schedule returned to normal, I knew I had to sign back up. I am so happy to be back, I missed this program, it really is so much fun and I love meeting other bloggers and readers. So this month I received my box from Meg at Meg Vs Chub. I love her tag line: Screw You Chub, Get Outta My Way.

Now to the goodies: Herbal Pop Corn and some Imported Italian Pasta, I cannot wait to try the pasta with a homemade pasta sauce recipe I have been working on. I also see the popcorn going down with a Netflix Movie, a warm blanket, and a beer on a Saturday night.

and, this little jar of love. Pure Maple Syrup. I am planning a special french toast breakfast for this. I think it will be amazing warmed up and drizzled over some baked berry french toast on a cold Sunday morning. I plan on searching the internet for the perfect recipe. I love it when a food item inspires a great meal, plans and something to look forward to. Meg sure did supply me with a clear vision of what to do with my goodies.

Now back to this little container. Dried Kiwi. How cool is that? Well they were as delicious as they look. I love dried fruit, it always makes a great snack, and I had never tried dried Kiwi so I was happy that it was in my box for me to try. My husband also enjoyed them.

Here’s a detailed explanation of the program:

-On the 5th of the month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
-You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
-The boxes are to be filled with fun foodie things, local food items or even homemade treatsThe spending limit is $15The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
-You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
-Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you can choose to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.

It sure gives you something fun to look forward to each month.

Okay, here is some back ground. I am in a Foodie Pen Pal Program and I also order Foodie Boxes. I love to try new things, especially if they focus on health and wellness. The Conscious box focuses on sustainability, environmental stewardship, and social responsibility. I love it. I thought I would try it for a few months, but found myself renewing the subscription for an additional 3 months. I think I’m hooked.

So in December I received my Vegan Conscious box. The items in the box were selected by the Vegan Zombie! Favorite Box EVER, partly because I am obsessed with Zombie’s and all things Zombie Related. This is the postcard for the Zombie Crew.

So much good stuff. This box had a huge variety of food and snack items, along with hb&a items and household items.

I also ordered myself the December Original Conscious box! They offered a one time purchase for the holidays, and I was all over it. Merry Christmas to ME!

Before I could even break into the December boxes, I received my January Vegan  Conscious box. Each month they stuff the box with so many new products and fun things to try and sample. Looks like I am going to have to get serious about some snacks.

I just saw on Facebook that the Conscious box now offers a box of gluten-free items! This is my one indulgent to myself each month. I don’t buy shoes or purses, I order monthly foodie/health conscious subscriptions. I think its great that the folks over at Conscious Box offer an original box, a vegan box and now a gluten-free box. They sure do meet everyone’s needs.

Well, I’m off to sort through my goodies….For anyone that is as Zombie Obsessed as me, F.Y.I.: The Walking Dead’s season resumes on February 10th. Now that is one show I am beyond obsessed with.

So now on to the Birthday Dinner.

I took my husband out to Celebrate his 47th Birthday last week! I still cannot believe that we are adults, let alone middle-aged. We started dating when I was 23 and he was 26. We dated for 2 years and then we were engaged for 1 year, and married going on 18 years. So here we are now 21 years later and we both still feel as young as we were when we met, but clearly were not. I mean how did this happen, were a middle-aged couple.  We laugh and laugh about that. Well anyway, here’s our celebration dinner. He still makes my heart go Pitter Patter.

So as a middle-aged couple we ordered a libation to get the Birthday Celebration going. Cranberry Cosmo for me and a Two Hearted Ale for Birthday Boy Jeff.

We started with the Calamari. This dish is so good its;

    • Steak cut strips flash fried & finished with a 

Lemon Caper Beurre Blanc sauce.

So now to the fun part, reviewing Aloic.

I am not shy with my option and I must admit, I love to try new things! So first I tried Aloic right out of the bottle after a 45 minute walk on the treadmill. I was thirsty and my throat was dry. I immediately noticed the natural sweet grape flavor, and liked it very much, but what I really enjoyed was the pulp texture in the drink. So refreshing. So after a few swigs, my thirst was quenched, and I was ready for an after workout smoothie. Better late than never… Here’s a little post about what I made, ate, and enjoyed over the holidays.

To start I baked some white chocolate chip oatmeal cookies, they happen to be my all time favorite cookie. EVER.

Made my Favorite Instant Oatmeal Pancakes for breakfast.

So easy and satisfying.

Instant Oatmeal Pancakes:

Ingredients:

  • 1 packet instant oatmeal (any flavor)
  • ½ banana , mashed
  • ½ teaspoon baking powder
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon
  • 13 cup Egg Beaters egg substitute

Directions:

  • Mix and combine all ingredients.
  • Pour into non-stick skillet and when you shake the pan and the pancake moves, it’s time to flip.
  • Brown on both sides

Top with your favorite ingredients and enjoy. I just topped with Chia seeds and agave nectar. Sheer Perfection.

I also made some Healthy Brown Krispy Treats. Gotta have good for you treats with the indulgent one! Just playing fair.

Brown Rice Krispy Treats:

Ingredients:

  • 6 cups crispy brown rice cereal (I used Erewhon)
  • 2 tablespoons almond butter, peanut butter or other nut butter
  • 3/4 cup agave syrup

Preparation:

  1. Place cereal in a mixing bowl.
  2. Heat nut butter and rice syrup on low heat, stirring until warm and creamy, but not boiling.
  3. Pour the nut butter and rice syrup mixture over cereal and raisins and coat evenly.
  4. Press mixture evenly into a 13×9 casserole dish.
  5. I put the pan in the freezer for about 30 minutes to make it easier to cut into squares.

For my contribution to my families holiday meal I made the Pioneer Woman Burgundy Mushrooms.

They were so worth the 9 hour cook time. Yep, 9 hour cook time. Crazy right? But I have to tell you,  I will make them again and again.

Pioneer Woman Burgundy Mushrooms: 

Ingredients

  • 4 pounds White Button Mushrooms
  • 2 sticks Butter
  • 1-1/2 teaspoon Worcestershire Sauce
  • 1 quarts Burgundy Wine (other Reds Will Work)
  • 1 teaspoon Freshly Ground Black Pepper
  • 2 cups Boiling Water
  • 4 whole Chicken Bouillon Cubes
  • 4 whole Beef Bouillon Cubes
  • 1 teaspoon Dill Seed
  • 5 cloves Garlic, Peeled
  • 2 teaspoons Salt

Preparation Instructions

  • Thoroughly wash the mushrooms and throw them into a large stockpot. Add all the remaining ingredients except the salt. Stir to combine.
  • Bring the mixture to a boil over medium-high heat. Reduce heat to low and simmer, covered, for six hours.
  • Remove the lid, then continue cooking, uncovered, for three hours.
  • Add salt to taste at the end if desired. The mushrooms will be very dark in color. Simmer until needed. Server straight from the pot or in a serving bowl.

I scored a new toaster oven from the rents. Love new kitchen appliances!

Special Delivery….#justaddgood…Chobani

My good friends at Chobani sent me a wonderful box of goodness to try out in some recipes. I used this Conversion Chart from Chobani.

So my first thought was to make some zesty chicken enchiladas. I didn’t use a particular recipe, I just added a few easy ingredients I love and threw them together, or rather rolled them together. So here’s how this very zesty recipe came together. I used the Greek yogurt instead of sour cream or a cheese soup mix like I normally would use. This really kept this recipe light and creamy, plus it gave this dish a real zippy bite. I was really excited at how the dish turned out. One huge benefit of using Chobani Greek yogurt for me is the increase in the protein it added to my meal. It’s a keeper recipe, with a keeper ingredient.

Ingredients

1 Can Yellow Corn
1 Can Black Beans
1 Cup Chobani Greek Yogurt
2-3 Chicken Breasts Cooked and Shredded
6 Large Wheat Tortillas
3/4 Cup Shredded Cheese – 1/4 Cup for Topping Tortillas

1 Cup Medium Salsa – Plus 1/2 Cup for Topping Tortillas

Directions

Preheat oven to 350 Degrees.

Incorporate all the ingredients together and spoon a large portion of stuffing mixture into each tortilla and roll. Place in a glass baking dish. Spoon additional 1/2 Cup salsa over the rolled tortillas and sprinkle with extra cheese. Bake uncovered for 30 minutes or until bubbling hot.

Also wanted to introduce my new little girl, Ginger. We rescued her and she is amazing. She loves Stuart and Stuart loves her. She is 6-8 months old (vets best guess). After we lost Killian we decided to let our next dog find us. What we did not know is that she was already looking for us. I will post her story in an upcoming post. For now here’s a few pictures of my Ginger Lou.
