Now onto another summer favorite. Chopped Salads and Beer.

Chop Salad! That seems to be my current addiction. I’ve made one almost every day since the Michigan Bloggers Meet-Up.

I used recipes from here and here. I just chopped away and added as much or little of each of the ingredients below. No measuring.

Ingredients:

  • 1 Bag Mixed Lettuce
  • Shredded Carrots
  • Shredded Red Cabbage
  • Chopped Chives
  • Goat Cheese Crumbles -or- Blue Cheese Crumbles
  • Wonton Strips
  • Bolthouse chunky Blue Cheese Yogurt Dressing
  • Dried Cranberries and Honey Roasted Pecans
  • Chopped Chicken Breast

directions:

Chop lettuce in 1/2-inch squares. Mix lettuce with the chopped carrots, and cabbage. Toss in the pecans and  dried cranberries with the dressing. Add the tortilla strips, goat cheese or blue cheese crumbles, and chives. Serve in a chilled bowl.  Top with sliced grilled chicken breast.

Also had a Applebee’s Chop Salad and a Beer. Loved this salad. It had tortilla strips, black beans, chopped chicken and the dressing was zippy and creamy.

So lets talk about summer. It’s the best for so many reasons. One reason I love summer is My Grill. It makes for Simple, Fast, and Light Meals. My grill goes into over time in the summer. I grill everything.

  • Pizza
  • Vegetables
  • Side Dishes
  • Fish
  • Meat
  • Tofu

Just to name a few.

Stubb’s Citrus Chicken

Ingredients

4 chicken breasts

Stubb’s Chicken Marinade

1 orange

Stubb’s Moppin’ Sauce (optional)

Cooking Instructions

Fill dish with Stubb’s Chicken Marinade and half the juice of one large orange. Marinate chicken breasts in it for 1 hour up to overnight.

Preheat grill to 300-325 degrees. If you want to bake the chicken, preheat the oven to 375 degrees. Place chicken on grill over direct heat, mopping with Stubb’s Moppin’ Sauce while cooking. Grill 5-10 minutes on each side until fully cooked (the internal temperature should be 165 degrees). If baking the chicken, bake 9-15 minutes on each side until juices run clear and the internal temperature is 165 degrees.

Allow meat to cool a few minutes before serving. Slice up the remaining pieces of orange and plate with the chicken.

Chile Rubbed Pork Chops with Mango Salsa

Ingredients

4 boneless pork chops

4 teaspoons Stubb’s Pork Spice Rub*

½ mango, diced

½ medium tomato, diced

¼ cup red onion, diced

2 tablespoons Stubb’s Pork Marinade

Cooking Instructions

Lightly coat both sides of each pork chop with Pork Spice Rub.  Let rest for 15 minutes.

Mix together the mango, tomato and red onion.  Fold in the Stubb’s Pork Marinade.  Set aside.

Prepare the grill for direct cooking.  Cook the chop over direct heat for 4-5 minutes per side (longer if the chop is thicker).  Remove from grill and let rest for 5 minutes.  Top with mango salsa and serve.

*Substitute a mixture of chili powder, salt and sugar.

Here’s what I made with Stubb’s Sweet Heat B-B-Q Sauce and Stubb’s Bar-B-Q Spice Rub.

Double Stubb’s Bar-B-Q Chicken Burgers.

Ingredients:

1 pound ground chicken

1/4 cup crumbled blue cheese

½ small onion, chopped into small pieces

2 cloves garlic, minced

2 tablespoons Stubb’s Sweet Heat Bar-B-Q Sauce

2 teaspoons Stubb’s Bar-B-Q Spice Rub

¼ teaspoon each salt and black pepper

¼ cup Panko bread crumbs

*Note: I did not use an egg to bind the ingredients, the ground chicken was moist enough to hold together without it.

For serving:

Sliced Avocado

Sliced Cheese

Lettuce

Tomatoes, sliced

Hamburger buns

Cooking Instructions:

Prepare grill for medium-high heat.

In a large bowl, mix together ground chicken, onions, garlic, sauces, seasonings, and bread crumbs. Using hands, shape ground chicken mixture into four equal patties.

Cook burgers on prepared grill for 4-5 minutes per side or until cooked through (160°F for beef, 165°F for ground chicken/turkey). When grilling the second side of the burger slather with additional Stubb’s Sweet Heat Bar-B-Q Sauce.

Serve on hamburger buns, topped as desired with avocado, sliced cheese, lettuce and tomato.

I also used the Stubb’s Bar-B-Q Spice Rub for my Red Skin Potatoes side dish.

These came together easy. I boiled the potatoes for 30 minutes. Sliced and semi smashed the potatoes on a cookie sheet, then sprinkled with Stubb’s Beef Rub, and drizzled with Olive Oil and baked on 375 degrees for the total cooking time of the Bar-B-Q Chicken Burgers. That ended up being approximately 10 minutes or so, just enough time to get crispy.

I poured my self a big old bowl and got to it. I love cereal anytime of the day. For me it’s like coffee. Meaning this; I take my time when I eat it and enjoy the experience. Something about just kicking back and savoring the crunchy spoonfuls. I have to say the cinnamon was really good. They sure did appropriately name it Cinnamon Heaven. It was crunchy and did not get soggy in the milk, which is a deal breaker for me. Cannot wait until my next bowl.

Crackers are my weakness. I love to snack on crackers. I like my crackers solo, dipped in hummus or topped with cheese. I was really excited to try these out once I opened the bag. They have amazing texture and I love seeing the grains and oats in crackers. These little crackers were packed with flavor. You could really taste the cheddar and all the grains. Really enjoyed my Say Cheese! Crackers.

We all love snack bar. I always have a box of them in my kitchen on hand for snacks and even some as meal replacements. They are easy and some are very healthy. Well I think I just found a new favorite. Again, I have to go back to texture. I love grains and nuts and when I choose bars, I choose ones with TEXTURE. I really do not care for the bars that are all blended together and have no crunch or little nuggets of goodness. Van’s snack bars are loaded with all the things I love. Little chunks of  chocolate and grains. I enjoyed each and every bite.

Along with “phytonutrients“.  I had to look this one up on WebMD: When you eat or drink phytonutrients, they may help prevent disease and keep your body working properly. Bestowed suggests pairing them with your morning yogurt or replacing your mid-morning snack. In the end they sure did taste good and did go well with my morning yogurt.

Oloves Hot Chilli Mama Olives When I saw these I was thrilled! I squirreled them away in my travel bag. I have a trip coming up and I wanted to save these for a snack with my lunch on the go as I travel.

Nektar Honey Crystals  Genius, just genius.  Honey crystals! Fell in love, they were so good. I added them to a cup of tea and sipped away.

Kind Healthy Grains Oats & Honey Clusters Granola does not last long in my house. We love the stuff.  I also love the Kind brand. I buy the Kind Bars all the time. So I was excited to try the granola and of course the Kind Brand did not disappoint.

iTrain ($25 Gift Card): What a great site. You register your gift card, select a workout or training plan and download it. So many options to choose from.

Manitoba Harvest Hemp Hearts  I use hemp seeds in my oatmeal, yogurt cups, salads, soups, and even top off my hummus with them.  They are loaded with protein and vitamins and are a great way to add essential omegas and protein in your diet.  I also bake with them and really love to just snack on them right out of the bag. I have even started using them in smoothies. Love them, Love this brand.

EBoost I’ve tried EBoost before, and I really love it. It mixes easy and has great flavor. Plus its always great to keep in your bag so anytime you need a pick me up you just add it to your water.

Today I wanted to share a review I recently did. I first meet The Simply Bar at the Blend Retreat. They were given out to us on our hike as fuel, and wow I was really happy we had it on hand, that hike was no joke. It gave me the fuel to push through the hike.

So when Jesseny contacted me to do a review of the bar and some of the select flavors, I was super excited. I love the simplicity of the bar, I see where the name came from, no other way to describe it. Real ingredients, real flavor, it’s simply real food.

Flavors included:

  • Lemon Coconut – Amazing flavor and texture and there are real pieces of coconut in the bar. Not only do you smell the coconut and taste it, you also get the lemon flavor and lemon scent loud and clear along with the coconut. Amazing flavor combination.  To be honest I would have never thought that I would like this flavor combination, but I really did.
  • Cinnamon Pecan – Something comforting about this flavor. The smell of cinnamon always gets me. I honestly can taste the ingredients. Truly love it when a product is true to its flavors. The pieces of pecans were fresh and crisp.
  • Peanut Butter Chocolate – If you like chocolate, you will love this flavor, really has a sweet flavor without all the sugar, remember these are real ingredients without unnecessary added sugar.
  • Caramel Peanut – So far there is not a flavor in the bunch that I can even say the slightest negative thing about. I am a huge fan of caramel flavor and loved the added peanuts in the crisps.

The one thing that really draws me to The Simply Bar is the high protein value, 16 grams of protein in each bar. Then the next draw for me is fact that the bar is not all chopped up and processed together into a solid mass and dipped in chocolate. I love the fact that the bar keeps its crispy texture which allows the bar to be savored and chewed. I am a fan of The Simply Bar.

Less sugar than fiber. No artificial sweeteners or sugar alcohols. I’m all over that.

My personal favorite after tasting them all was the Lemon Coconut, but I really enjoyed them all.  I had it in my head that the caramel was probably going to be my favorite, because anything caramel is normally a favorite flavor, but for this review I let The Simply Bar speak to my taste buds, and that was the one that stood out.  They taste natural and healthy. So I have to give these bars 4 stars. I’m hooked.

Now Let’s talk about the stats. The Simply Bar­­ is a high protein, low sugar, low-fat, low glycemic bar with only a handful of natural ingredients. The company was Founded by Cathy Richards. She created the Simply Bars after experiencing difficulties finding snacks that didn’t upset her stomach. She has Crohn’s Disease.

Each bar contains 16 g protein, 2-4g of fat, 3 g of sugar, 4 g of fiber, and 160 calories or less. Each bar is based on Non GMO soy crisps along organic brown rice syrup. All the cocoa bars are made with organic cocoa.

Any reason to use wonton wrapper is a good enough reason for me. I love them, the things you can stuff into them is endless. You might see them on my blog from time to time. I use them for Wonton Taco Cups . I use them for Kale Ravioli’s. Wonton’s are so easy to work with and they crisp up so nice. I’m going to take you through a fun and easy recipe that is perfect as a side dish or an appetizer, but I will admit I sometimes eat them for dinner.

The can chicken breast I get from Sam’s club is so good, it’s all natural with no MSG, or preservatives, plus is it chicken breast meat, no rib meat or other additives are added. So I never feel guilty serving it.

One thing you can always find in my house is a variety of cheese products, so I wanted to try something different in this Quito so I used Laughing Cow cheese wedges instead of shredded cheese.

Just chop into bite size pieces and smash into the chicken and salsa mix, it really gave it a creamy texture.

Add some corn.

Get your wraps ready.

Plop a tablespoon full on the wrap and spread over the entire wrap.

I do suggest getting it as close to the edge as possible so the end of the Quito’s has some filling. It’s such a thin layer that it will not squish out as you roll it.

Assemble on a cookie sheet and bake foe 15 minutes on 375 degrees.

They come out all crispy and ready to be devoured.

Here’s The Recipe:

Ingredients:

  • One 12.5-oz. can chunk white chicken breast in water, drained and flaked (about 1 1/2 cups)
  • 1/2 cup salsa
  • 3 Laughing Cow Blue Cheese Wedges or 1/3 cup shredded cheese
  • 1/4 cup corn
  • 16 small square wonton wrappers
  • Optional dips: salsa, red enchilada sauce, or sour cream

Directions:
Preheat oven to 375 degrees. Prepare a baking sheet by spraying with nonstick spray and set aside.

In a medium bowl, combine the chicken, salsa, cheese and then add the corn. Mix thoroughly.

Lay two wrappers flat on a clean, dry surface. Spoon a heaping tablespoon of chicken mixture onto each wrapper, and spread it evenly over the entire surface of each. Roll each wonton up tightly into a cigar-shaped tube. Place wonton on the baking sheet, seam side down. If needed, secure with toothpicks. Repeat with remaining wonton and chicken mixture.

Bake until crispy, about 15 minutes.

Next time I make these will be adding black beans, I want to load them up with some fiber.
