Happy Fall. So here in Michigan it is getting cold. We have also been getting crazy high winds lately, which just make it feel that much colder. So here are some things that have been keeping me occupied lately.

I made a succulent terrarium. My inspiration came from my favorite Michigan YouTuber: How Jen Does It.  She featured this on one of her house tours and a tutorial. I was obsessed, and had to create my own.

My blog is always a mix of things. Food, Health, Reviews and Travel. I try to keep it a balanced mix and today’s post is a bit of all the above.

I was sent the following BeetsBlue to review. I never thought I would want to use a Heart Rate Monitor, so that is exactly why I wanted to try it. I am not a runner or by any stretch of the imagination athletic, but I do my own versions of workouts that fit my lifestyle and age. I am health conscious and am very active and I live by getting in all my 10,000 steps per day, and I love to walk. I hiking/walking at a local farm as well as using my indoor treadmill are my main ways to stay heart healthy.

Love the Alarm on this PagerTag, while testing it I went out of range and the alarm really was loud enough to locate and or alert you that your item is not where you left it. 

Also, a few things I plan to use for is traveling and also on my little Ginger girl. When we travel or camp she is a very curious little girl and I can see her running off if she was to ever squirm out of her collar. (this happened once while camping when she got scared of some fireworks)

Here I am able to keep track of my work bag which hold my small purse and my keys. I use a carabiner clips so I can keep my keys and both my bags together and track all (3) three items!

It was so easy to connect to Blue Tooth with my phone and Install the app at the Play Store. I was up and running in only a few minutes and then had fun learning and playing with all the settings and the alarms.

I will keep you posted on the BeetsBlu product updates as I use them more in my daily life. Thank you for sending me them to review, I really enjoyed and liked using these easy and functional gadgets. I really loved the PagerTag and will be getting a second one for my husband. I think he can really benefit from having one himself. I am so excited and really love and will recommend the PagerTag to friends and family. I really love the value of this for people who travel, or just might need help locating items, it is so versatile.

Here’s a few other highlights of items I have been loving and using. 

Been hooked on Subscription beauty boxes lately. I work 10 to 11 hour days most days of the week with weekends off so I find I love getting little boxes of fun after a really long day. I’m usually gone 12-13 hours each day with my commute to work. SO this is my little perk me up pamper gifts I love to send to myself. Celebrated 95 years of My Grandmothers life in Arizona. She is truly the most healthy person I have ever met. She was born in Rome and is perfect health. She eats well, enjoys wine with dinner and walks daily. I love everything about her. She is such an inspiration to me. Posted my travel bag in this post.

Better late than never… Here’s a little post about what I made, ate, and enjoyed over the holidays.

To start I baked some white chocolate chip oatmeal cookies, they happen to be my all time favorite cookie. EVER.

Made my Favorite Instant Oatmeal Pancakes for breakfast.

Even Elf loves Instant Oatmeal Pancakes.

So easy and satisfying.

Instant Oatmeal Pancakes:

Ingredients:

  • 1 packet instant oatmeal (any flavor)
  • ½ banana , mashed
  • ½ teaspoon baking powder
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon
  • 13 cup Egg Beaters egg substitute

Directions:

  • Mix and combine all ingredients.
  • Pour into non-stick skillet and when you shake the pan and the pancake moves, it’s time to flip.
  • Brown on both sides

Top with your favorite ingredients and enjoy. I just topped with Chia seeds and agave nectar. Sheer Perfection.

I also made some Healthy Brown Krispy Treats. Gotta have good for you treats with the indulgent one! Just playing fair.

Brown Rice Krispy Treats:

Ingredients:

  • 6 cups crispy brown rice cereal (I used Erewhon)
  • 2 tablespoons almond butter, peanut butter or other nut butter
  • 3/4 cup agave syrup

Preparation:

  1. Place cereal in a mixing bowl.
  2. Heat nut butter and rice syrup on low heat, stirring until warm and creamy, but not boiling.
  3. Pour the nut butter and rice syrup mixture over cereal and raisins and coat evenly.
  4. Press mixture evenly into a 13×9 casserole dish.
  5. I put the pan in the freezer for about 30 minutes to make it easier to cut into squares.

For my contribution to my families holiday meal I made the Pioneer Woman Burgundy Mushrooms.

They were so worth the 9 hour cook time. Yep, 9 hour cook time. Crazy right? But I have to tell you,  I will make them again and again.

Pioneer Woman Burgundy Mushrooms: 

Ingredients

  • 4 pounds White Button Mushrooms
  • 2 sticks Butter
  • 1-1/2 teaspoon Worcestershire Sauce
  • 1 quarts Burgundy Wine (other Reds Will Work)
  • 1 teaspoon Freshly Ground Black Pepper
  • 2 cups Boiling Water
  • 4 whole Chicken Bouillon Cubes
  • 4 whole Beef Bouillon Cubes
  • 1 teaspoon Dill Seed
  • 5 cloves Garlic, Peeled
  • 2 teaspoons Salt

Preparation Instructions

  • Thoroughly wash the mushrooms and throw them into a large stockpot. Add all the remaining ingredients except the salt. Stir to combine.
  • Bring the mixture to a boil over medium-high heat. Reduce heat to low and simmer, covered, for six hours.
  • Remove the lid, then continue cooking, uncovered, for three hours.
  • Add salt to taste at the end if desired. The mushrooms will be very dark in color. Simmer until needed. Server straight from the pot or in a serving bowl.

I scored a new toaster oven from the rents. Love new kitchen appliances!

The This and That of Summer

So I wanted to do a post that featured some of the adventures I had over the summer, I did not blog very much because I wanted to enjoy every moment.

So here is a bit of this and that of my Summer.

Miami to Visit our Best Friends.

Attended the Blend Retreat.

Took our Second Annual Houseboat Trip to Kentucky with 28 of our Friends.

We ended up renting two boats this year. We had such a great time.

Jeff and I Celebrating our 17th. Wedding Anniversary on the House Boat Trip. Our friend’s really helped us make it a fun and special day. Every year we take a fun picture on our anniversary and a serious picture, and the fun one always makes it into the scrapbook I keep of our life together. Here is the Fun Picture for year #17! Jeff and I have been together for a total of 21 years. We dated for 2 years, then we got engaged. Our engagement lasted 2 years and then we married in 1995. I cannot imagine life without my Jeff, he is my everything.

During the summer I always have my camera on hand to take pictures of bugs, birds, plants and anything else that might interest me. Here are a few of my favorites.

Made a Larger than Life Steak and Egg Salad.

Gotta tell you, this is one good burger.

I Hiked.

Did some Corn Field Hiking with my K-9 Friends.

Decal and Molly my Hiking Pals.

I Spent Lots of Time with my Husband. We boated, We rode our Harley’s, We took our furry kids on lots of walks, We sat on our deck, We gardened, We laughed, We loved, We ate, We drank and We hung out with friends and family. We had a summer of fun and made some great memories.

Conclusion: Summer 2012 was Epic.

This has been my ride to work for the last week. My husband’s car is in the shop so he has been using mine. So my recreational vehicle has become my main vehicle. I will be the first to admit it, I am a fair weather rider. Well this past week I have ridden in a light sprinkle and 45 degree weather. It was not that bad, but the second I get my car back I am going to rejoice. It’s hard packing all I need for the day in those little side bags. Okay pity part is over.

Oats in a jar or OIAJ, for breakfast.

Added all my favorites, chia seeds, soy milk, nut butter and cinnamon.

Came home to this amazing delight. Popchips sent me a case of there Chili Lime Popchips. I love them, they are such a great company. They were a Blend Retreat sponsor and rewarded any of  the attendees with a 30 day supply for blogging about our experience with popchips. Well that was easy for me, I loved them, I cannot get enough of them.

The chili lime flavor is both spicy hot and sweet, so much flavor, I think  popchips are going to be a staple snack in my house from now on.

Such a satisfying healthy snack. Did I mention that they are all natural flavors and ingredients.

Then I got to dinner. Really excited to try a new recipe for kale.

My little kid, Killian loves him some kale. He loves any green leafy vegetable, well he love all veggies.

Side dish of couscous.

So this recipe for sautéed Kale is easy, it softens it and takes the bitter bite right out.

Cook the onions and garlic with some olive oil, about 5 minutes. Then add the kale and a 1/2 cup of vegetable broth and let it simmer for 10-15 minutes stirring as needed.

Grilled some chicken breasts.

Put it all together and sprinkled with feta cheese, and dig in.

Love eating on the deck, makes the work week fade away.
