Okay, I think I am addicted to Boot Camps, first there was Tina’s Best Body Boot Camp, then the Boot Camp at the Blend Retreat and now the Fitmixer Boot Camp.  I love organized workout groups, it keeps me motivated and I really look forward to the daily tasks.

So with the Boot Camp I have been introduced to amino’s, well I am excited about this because I really get sore after workouts and the amino’s are supposed to help repair muscle tissue and recover faster.

The entire Boot Camp package looks like this. This will take me through the entire 12 week program.

These are some of the samples I received from the Blend retreat.

The amino’s taste so good, I love the grape flavor.

Along with the powder supplements they also have a healthy diet plan that is designed specifically for each participant from a registered dietitian. Here is my breakfast and lunch. I love to prep my snacks and meals, it keeps me on task and allows more time to concentrate on the workouts. That’s one thing with Boot Camps some of the workouts and moves I am not familiar with, so they usually have videos showing all the moves and proper execution. So I usually watch the video in full, and then I do the workouts. So that can eat up a lot of time, but worth it when you find a new favorite exercise.

After work I head home and get right on my workout’s.

The first day we had a Fit test to complete. The test gauges us at the start of the program and will be repeated mid Boot Camp and then at the end, this will show us how we progressed through the program. My weak area is and has always been my core. I also see from the test that I need to work on my triceps strength. I like that each evening we get our next days workout, a motivational thought, and a nutrition tip of the day. They also have snack suggestions and recipes. So much support is available. Plus on Thursday evenings we have a group conference call. Looking forward to my first call tonight.

Then it’s off to make dinner. I plan on keeping it clean and simple, a lean protein, a hearty carbohydrate and a vegetable, plus the plan even suggests a dinner roll. Love that.

So this past week-end I attended the Blend Retreat. It was the highlight of my year so far. I had an amazing time. I met so many amazing ladies. It was really fun being a part of the First Annual Blend Retreat.

It was held in Boulder Colorado at Chautauqua Park.

I had great roommates, Katie at Talk Less, Say More and Amanda at Diary of a Semi-Health Nut.

We had this super cute cottage.

All the rooms were cozy and rustic.

Then there was the view off the back porch.

Once I arrived I was greeted by our hosts Lindsay, Katie and Janetha.

Above photo taken from Katie’s Blog.

Also received my Big Bag of Swag. There was some really Amazing stuff in this bag. I think I will dedicate a post to the swag bag. I really want to cover all the goodies we received. There are some very generous companies that showed us bloggers some serious love and I’d like to do the same in return for them.

After we settled in to our cabin and got to know one another a bit, we headed to the dining hall for a meet and greet cocktail hour followed by dinner and dessert. This gave us an opportunity meet fellow bloggers.

The table was loaded with some of my favorite bloggers.

Had some cupcakes from Street Fare.

They were so beautiful and taste.

There was a mad rush for the cupcakes when dinner was over, we each got to choose 3 mini cupcakes, I choose the Raspberry Lavender, S’mor, and Peanut Butter Pretzel. Absolutely loved the Raspberry Lavender.

Saturday morning at 7am, we had Boot Camp.

I was really excited to meet my Best Body Boot Camp instructor Tina.

Tina and Lindsay lead the Boot Camp on Saturday morning. It was so much fun.

Above picture taken from Lindsay.

Here are some scenes from the Boot Camp.

Got to meet the lovely ladies from fitmixer. I start the fitmixer Boot Camp on May 14th. so it was really nice to meet them and talk to them about the program and what to expect. I really liked meeting the people behind the products.

   fitmixer Boot Camp

My favorite Boot Camp picture has to be this one.

After Boot Camp it was off to breakfast.

We had an amazing breakfast courtesy of Xagave.

Beverage by Cheribundi.

Loved the tart cherry flavor, I am not a coffee drinker so I headed straight to the Cheribundi table.

So far this post covers Friday evening through Saturday morning breakfast. I really wanted to break up the post into three parts due to how detailed this trip really was. Plus it’s difficult to cram an entire week-end into one post.

Ever since I can remember I have been eating Corned Beef and Cabbage on St. Patty’s Day. My mom took her corned beef dinner very serious. My parents would head to Down Town Detroit and go to Eastern Market to pick out a nice flat beef cut brisket.

So when I got married I continued the Tradition of a Corned Beef with Cabbage meal for St. Patty’s day weekend. Although I rely on my local Kroger’s for my corn beef, I still take this meal very serious. So you can imagine my surprise when I found the brand that my parents use to buy, from Detroit Michigan. Score. I love supporting my State.

How easy can this meal be, boil in a pot for 2-1/2 hours and then eat. I used a Dark Guinness, some water and the spice pack.

Vegetables on the menu, cabbage, carrots and red skin potatoes.

With an hours left on the Corned Beef cook time I added the potatoes and the carrots. Once they were cooked properly I removed the meat and the veggies, added some more water and boiled the cabbage  for 20 minutes.

Then I made and plate, and ate every bit of food on the plate.

I love Tradition. Now I have dinner for the next two days or so.

Plank Club Update: I am sitting solid with my 50 second plank, I have not been able to add-on to the time without breaking my form, so I will continue to do daily planks and hope that in time I will get stronger and be able to add-on to the time.

Best Body Boot Camp Update: Today was a rest day. I reviewed my Week #3 and Week #4 schedule that Tina sent out and I am ready to head into Week #3.  Looking forward to the challenge that Week #3 will present.

Question of the Day: What’s your favorite holiday meal?

There’s just something about the weekend, I love the time I get to relax and make breakfast and just sit and talk with my husband. Unlike the typical breakfast during the week, where I eat at my desk at work. I was a bit undecided on what I wanted for breakfast, I thought I wanted Van’s French Toast Sticks while my husband wanted eggs. So I grabbed everything to make both and realized that I wanted eggs also. So back in the freezer went the French Toast Sticks.

It was a good call, I had 2 eggs scrambled with imitation crab meat and shredded cheese and just a splash of milk. My husband had 3 eggs with ham and shredded cheese and a splash of milk.

Multi-tasking is a must when you want to eat different ingredients and want to eat at the same time!

Now that I had my eggs, I can’t seem to get the French Toast Sticks off my mind. I just might need to think about having them as a snack later.

That’s how you Kick it Saturday Style. Eggs two ways or His and hers if you like.

Now that I am full and fueled I plan on getting to the planning of my day. Today is Cardio of choice with my Boot Camp Program, so I have a treadmill power walk planned.

Tomorrow I get my first Rest Day from Boot Camp, I am very proud that I have followed the program and stayed on point. During the program we have in addition to the Workouts two goals that we give ourselves, I only had one day that I did not meet my goal.  I knew that the goal of getting myself to bed by 11 pm was going to be hard, but I really want to start forming better sleeping patterns.

Last night Jeff and I went to a Red Wings Game, our 3rd. this season! We had a blast, but I was so worried we would get home late and I would miss my Bedtime Goal, but I made it home and into bed by 10:56 pm.

And the Red Wings won 4-3! The last game we attended was in February where the Red Wings made sports history by winning 23 Home Games during a season, now that was a happy crowd.

It was a great game, I love watching live sporting events, the crowd always pumps me up. Plus I really love hockey, growing up my brothers played hockey and my father was a hockey coach, my mom volunteered at the concession stand, we were always at the Ice Arena as a family, we called ourselves  “Rink Ratt’s.” My contribution was to organize cheering sections. I really took it serious, I made up dances, I had moves, those are some of my favorite memories from growing up.

Also I wanted to pass on that the Blend Retreat still has tickets available. It is open to bloggers and readers. This is the first annual BLEND Retreat and it is being held May 4th-6th in Boulder, Colorado at the historic Chautauqua Park.

I’m attending Blend Retreat 2012.

What do you think, wouldn’t you love to join us. The price is right and who doesn’t enjoy fellowship. I hope to see you there.

Best Body Boot Camp Update: 1st. off I have learned that I can push past the pain. 2nd. I look forward to working out. Pushing past the pain has been easier than I thought. I had some serious thigh burning the first few minutes of my elliptical workout today, but once I got past the burn I found myself having more energy and ability to adapt to the changing intervals with ease. I have also found that I look forward to what I will get to try next, I mean not in a million years would I ever have thought that I would be doing some of these exercises, they always seems too advance for me, but when I am able to do them, and complete the set it just helps me build my confidence and lose the phrase “I can’t do that”.

Now on to something sweet. There are times when we all find a recipe that immediately you know I have to make that, well here’s one such recipe for Avocado Chocolate Pudding that I adapted from That’s so Michelle.  I knew that if my husband saw me making this he would taste it with hesitation or maybe prejudge what it would taste like, so I made it while he was working out. My husband loves food and he really is not picky at all, but I wanted him to eat the pudding and tell me how he liked it before I told him what was in it. I just love to show him that you can add goodness to any meal, snack and dessert.

Avocado Chocolate Pudding

It was weird to see avocado and peanut butter in a bowl together.

I was excited to get to try out Swanson Organic Cocoa Powder in a recipe that would really feature it. I just love that fact that there is NO sugar added to it and it has a smooth cocoa flavor.

Finding way to incorporate coconut oil into my diet has not been hard, I love this stuff and it really is easy to find ways to use it.  Check out this link for reasons why coconut oil is so amazing.

Mix it all together in a bowl and use your hand mixer until smooth.

This batch made  4 really nice size servings. I added chocolate chips for a little crunch.

So here’s the reaction from my husband. He loved it. Which I knew he would. So I then told him what was in it. The only thing he said was “You Put What in My Pudding?” It was so funny, he really didn’t care what was in it because it tasted like Chocolate Pudding.

Ingredients  (Serves 4)

1 Ripe Avocado
1/4 Cup Creamy Peanut Butter
2 Tablespoons Cocoa Powder
1 Tablespoon Coconut Oil
6 Packets of Truvia or 1/4 Cup sugar
1/4 cup Agave Nectar
1/2 Teaspoon Vanilla
Dash of Salt

Place all ingredients in a large bowl and mix with a hand mixer until creamy and smooth and serve.

Question of the day: Have you tried coconut oil? What did you use it in?

I have really tested my balance and strength since starting Boot Camp. I am just so excited that I am doing exercises I did not think I could do, did not know how to do, and really challenging different muscles. Plus the support from the other participants has been so amazing.

So in keeping with clean and healthy eating I decided to make a Fish Surprise for dinner. I saw some amazing fresh fish fillets at Kroger’s so I grabbed them up. They were already marinated in a beautiful Bourbon sauce.

So all’s I had to do was bake them and enjoy.

I used the tin foil method. Just fold in the sides and roll down to close. It’s like the bend and snap, but with tin foil!

I bought three fillets they were a perfect size for me, but I worried that one was not enough for my husband, and I am so glad I did. He ate them both.

I baked them on 375 degrees for 20 minutes. Then you just take out of tin foil and throw away the mess.

It had a really good flavor and I will defiantly look for it again. I also roasted up some broccoli and had some leftover Mayan Harvest Bake.

I wanted more.

Other amazing news that I have to share with you today is this: I am attending the Blend Retreat in Boulder this May. I have been thinking about it for a few weeks and after looking into the airfare and how incredibly affordable the tickets and the lodging are I decided that I had to go, what a great opportunity to meet fellow bloggers and readers.

I’m attending Blend Retreat 2012.

Plus I get to take a Group Boot Camp Class with Lindsay and Tina. There is also a group hike and lots of free time to explore Boulder and get to know other attendees. I am really excited about the entire schedule. I cannot wait to find out who my roommates will be.

Question of the day: Have you ever attended a Healthy Living Conference?

Completed Day #1 of the Best Body Boot Camp. Getting organized and prepped for it was really easy, Tina provided all the information, I just needed to put in the work, and work I did, wow it was a great workout.

So after my workout I wanted to really fuel my body, so I made a Recovery Smoothie with fruits and spinach.

Recovery Smoothie Recipe:

  • 1 Cup Coconut Milk
  • 1 Scoop Protein Powder
  • 1 Banana
  • 6 Large Strawberries
  • 1 Handful Spinach
  • 6-8 Pitted Cherries
  • 1 Tablespoon Coconut Oil
  • 1/2 Scoop Date Sugar
  • 2 Ice Cubes
  • 1 Handful Kashi Cereal (added to the top as a garnish)
Blended and served immediately.

The banana and spinach were fresh and the cherries and strawberries were frozen from my smoothie stash.

Today I added a little Swanson Organic Date Sugar into the mix, I really wanted to see if it would sweeten it up a bit.

Date sugar is a lower calorie and healthier option to brown sugar. Two of the little scoops are only 30 calories. I only used a 1/2 of the scoop, just to give it a try. Verdict, I liked it, and it did give the smoothie a sweeter flavor that it needed. I look forward to using in a muffin recipe that I plan on making.

I really love the little scoop that it came with.

Loaded  up the smoothie maker and let it run for about 45 seconds, I had to shake it up a bit and run it for another 30 seconds to really blend the ice cubes well.

This is just what I needed. This will hold me over until dinner tonight.

I also added a handful of Kashi Heart to Heart Cinnamon Oat Cereal.

Question of the day: What’s your favorite cold cereal?

Check Ya Later.
