When I go to Sam’s Club I always get these salmon fillets, they are stuffed with seafood and they are amazing.

I have had this bag of Bob’s Red Mill Pearl Couscous since the Blend Retreat. I received this in my swag bag and was not sure how I wanted to use it until I saw the goat cheese in my fridge. I thought the creamy goat cheese would really compliment the Pearl Couscous.

My favorite goats cheese brand is this Chavrie, it is soft and smooth.

I also had some spinach on had and threw in a few handfuls to the dish. Never know until you try.

Cooked the couscous as directed on the bag and then added my other ingredients of spinach and goat cheese, and combined and cooked for a few minutes.

Roasted some brussels sprouts.

Here’s the couscous mix. It came out smooth and creamy just like I hoped it would, but it did need some seasoning, which I added after my first taste test. A little salt and pepper did the trick.

Dinner is done!

Question of the Day: Do you ever use goat cheese when you cook? I usually eat goat cheese on toast or crackers or add to a salad, so it was fun cooking with it.

I was lucky enough to meet a few of the ladies from Chobani at the Blend Retreat. Chobani was one of our amazing sponsors. Check out their Blend Retreat Blog Post. 

They provided our Sunday breakfast. I could eat Chobani everyday, well I kinda almost do. Someday’s it’s my snack, other days it’s my breakfast.

During the Blend Retreat I had a serious love affair with Pineapple Chobani. I lost count after three bowls.

Mixed with granola or added into oatmeal is my favorite way to enjoy Chobani.

Chobani Rules!

So when I came home to this on my front porch, I was beyond excited. A few week’s back I received an email from Lindsay and Emily telling me that they were sending a case out to me as a thanks for attending the Blend Retreat, and a few days later I received an email from Ashley telling me when to expect my delivery. Even though I knew I was going to get the shipment I was still super excited when I saw the actual box on the porch. Jackpot.

I wondered how they could keep it cold during delivery and couldn’t wait to open it up, and check it out.

So it comes packed in a box that is insulated with a bag.

Once you open the insulated bag, you find that the inner case box that is surrounded by ice packs.

They ensure that the box stays cold and that the yogurt arrives safe and sound and ready to be eaten.

Seeing these 12 beauties smiling back at me made this girl Happy! Very Happy.

Thank-You Chobani for loving your Blend’s so much, we love you right back! Blend’s + Chobani = Healthy Happiness, and on that note, I have a date with a cup right now.

So this past week-end I attended the Blend Retreat. It was the highlight of my year so far. I had an amazing time. I met so many amazing ladies. It was really fun being a part of the First Annual Blend Retreat.

It was held in Boulder Colorado at Chautauqua Park.

I had great roommates, Katie at Talk Less, Say More and Amanda at Diary of a Semi-Health Nut.

We had this super cute cottage.

All the rooms were cozy and rustic.

  

Then there was the view off the back porch.

Once I arrived I was greeted by our hosts Lindsay, Katie and Janetha.

Also received my Big Bag of Swag. There was some really Amazing stuff in this bag. I think I will dedicate a post to the swag bag. I really want to cover all the goodies we received. There are some very generous companies that showed us bloggers some serious love and I’d like to do the same in return for them.

After we settled in to our cabin and got to know one another a bit, we headed to the dining hall for a meet and greet cocktail hour followed by dinner and dessert. This gave us an opportunity meet fellow bloggers.

  

The table was loaded with some of my favorite bloggers.

Had some cupcakes from Street Fare.

They were so beautiful and taste.

There was a mad rush for the cupcakes when dinner was over, we each got to choose 3 mini cupcakes, I choose the Raspberry Lavender, S’mor, and Peanut Butter Pretzel. Absolutely loved the Raspberry Lavender.

Saturday morning at 7am, we had Boot Camp.

I was really excited to meet my Best Body Boot Camp instructor Tina.

Tina and Lindsay lead the Boot Camp on Saturday morning. It was so much fun.

Got to meet the lovely ladies from fitmixer. I start the fitmixer Boot Camp on May 14th. so it was really nice to meet them and talk to them about the program and what to expect. I really liked meeting the people behind the products.

After Boot Camp it was off to breakfast.

We had an amazing breakfast courtesy of Xagave.

Loved the tart cherry flavor, I am not a coffee drinker so I headed straight to the Cheribundi table.

So far this post covers Friday evening through Saturday morning breakfast. I really wanted to break up the post into three parts due to how detailed this trip really was. Plus it’s difficult to cram an entire week-end into one post.
