Love comes in many shapes and sizes, my new love is in the form of these protein peanut butter balls.

Amaze-Balls is really all I can say about them. Crazy how sometimes the littlest food item packs the most flavor and satisfy my sweet tooth.

I have seen these Protein Balls here and there on other Healthy Living Blogs, but never really saw a flavor that made me stand up and shout, I need those NOW. Yes, I have printed each and every recipe I have seen, but have yet to make them, that was until I saw Calee’s recipe for Chocolate Salty [protein] Balls.

Peanut Butter Protein Balls

Adapted from Life + Running. You have to check out Calee’s blog, she is funny, smart, creative, and strong. She also has a mom named Dena, just in case you were wondering. We both completed the Fitmixer Boot Camp together, and we both attended the Blend Retreat. Her electric personality is contagious, go get some.

Ingredients:

  • 3/4 Cup Rolled Oats
  • 1/4 Cup Protein Powder
  • 2 Tablespoons Agave Nectar
  • 2 Tablespoons Peanut Butter
  • 1 Teaspoon Unsweetened Coco Powder
  • 1 Teaspoon Vanilla Extract

Directions

  1. Pour oats into food processor and pulse until they become a flour.
  2. Add protein powder and coco powder, and pulse to combine thoroughly.
  3. Mix in agave, peanut butter and vanilla — you can do this by hand if your machine can’t handle it. Pulse a few times and watch your machine. If it seems to be too much, pull dough out and mix by hand.
  4. Roll into tablespoon-sized balls.
  5. Refrigerate. Eat and Enjoy.

Last week my best friend Jody put in a request for a virtual meal.  Jody lives in Miami and I was so excited she asked me to make this, because it has been a long time since I made them, and I love them. Jody has been my best friend for 13 years and I value her friendship more than words can say. She moved to Miami from Michigan a few years ago for an amazing job opportunity, I miss her everyday, but she is my forever friend and distance does not change our friendship.

So after work I ran out and got some ingredients and made her request. Chicken Lettuce Wraps.

This is an easy, fast recipe.

Lots of healthy ingredients.

Cooking time was less than 8 minutes.

Made a fresh salad to go along with this light dinner.

Yummy, crisp and light.

Love the crunch from the water chestnuts. Amazing how much flavor they absorb from the sauce.

Also made my new favorite dessert. I just love me some Chobani Cheese Cake.

Chicken Lettuce Wraps

Adapted from Real Simple. 

Ingredients

  • 3  tablespoons  low-sodium soy sauce
  • 3  tablespoons  honey
  • 2  tablespoons  canola oil
  • 1 1/2  pounds  boneless, skinless chicken breasts, cut into 3/4-inch pieces
  • black pepper
  • 2  cloves garlic, finely chopped
  • 1  tablespoon  grated ginger
  • 1  bunch scallions, trimmed and sliced
  • 1  8-ounce can sliced water chestnuts, drained
  • 1/4  cup roasted chopped nuts
  • 1  small head Boston or Bibb lettuce, leaves separated
  • Garnished with mung bean sprouts

Directions

  1. Combine the soy sauce and honey in a small bowl. Set aside.
  2. Heat the oil in a large skillet over medium-high heat.
  3. Season the chicken with ½ teaspoon pepper and cook, stirring occasionally, until it begins to brown, about 3 minutes.
  4. Lower heat to medium and stir in the garlic and ginger. Add the scallions and cook for 1 minute.
  5. Stir in the water chestnuts and half the soy sauce mixture. Continue cooking until the chicken is cooked through, about 4 minutes. Remove from heat and sprinkle with the chopped nuts.
  6. Divide the lettuce leaves among plates and spoon the chicken over the top. Serve with the remaining soy sauce mixture for drizzling. Top with mung beans sprouts for garnish.

I also just found out yesterday that Jody is coming back to Michigan for the Thanksgiving holiday for a visit. Her family still lives in Michigan and when she comes to visit her family, they welcomes me into their home like I am part of the family. So I am over the moon with excitement that I get to see my Jody in 146 Days. Jeff and I went to Miami in March to visit Jody, so this is quite a treat that I get to see her twice in one year. 2012 is turning into an amazing year. Love you Jody.

Now onto a Fitmixer update.

So I have been doing the Fitmixer Bootcamp since May 14th. and we have just passed the 1/2 way mark. We completed a fit test on our first day and again at the 1/2 way point. I am happy to report that I was able to complete with ease several additional reps to each task. One exercise that I was really happy with seeing an increase was the Burpees. I did an additional 5 reps with ease and really felt like my form was solid the entire time, where the first time I felt like I was getting really sloppy towards the end.

So in addition to the workouts, I also walk a local farm trail which is a 2 mile walk. I walk it most weekdays and it ends up being a nice 30 minute walk. Walking helps keep me stretched after a good boot camp workout.

Work has been busy lately and I love that, the days have been flying by, but I am on the Fitmixer Boot Camp program and the program is set up to eat 6 small a day. So during the day I have been setting the alarm on my phone to remind me when it’s time for my next meal.

That has been really helping me stay on schedule. My first two meals are protein smoothies. The first protein smoothie I blend at home before I leave for work with fruit and the second meal mixes up well with the Fitmixer blender bottle.  Then I have lunch and a mid afternoon snack.

Me being the planner I am loves this, I pack all my water, Fitmixer powder, snacks and lunch all in a big bag the night before work. I love to be prepared.

So here’s how I started my day. Fitmixer Boot Camp Smoothie with banana and raspberries.

Digging my morning smoothies lately. I love the vanilla protein powder and I love choosing what frozen fruits I’ll be adding to it. Today’s was delicious.

Sliced and bagged an apple for my mid morning snack.

Later, dinner was thrown together. I knew what I wanted to make, but was not sure how it would all fit together. Grilled chicken breast, seasoned rice and kale chips on Flat Out bread, with a side of roasted broccoli. I wanted a clean, easy and filling dinner, and it worked out well together, I really liked it.

Had a really nice cool evening so we sat on the deck, ate dinner and enjoyed the view.

We have a pair of nesting swans on the lake this year and I have been watching them every night, tonight the male was swimming around while the female sat on the nest. He sit’s next to her most of the time, but tonight he took a nice long swim and cleaned his feathers. I hope I am home when the eggs hatch. She has been on her nest now for three weeks and the normal process is 40 days, so I really think the hatching is getting close.

The Lilly pads are starting to bloom and I love when they flower, I will be sure to post a picture as soon as I get one.

Finally got the picture I have been trying to get for days, the Baltimore Oriole that visits my bird bath daily.

Killian laid in the grass and relaxed for approximately 30 seconds, then it was right back to running around the yard monitoring any movement from anything.

Stuart was fascinated by the swan and stood on the deck woofing at him.

I snapped a picture of my blooming lavender, so pretty, smells amazing.

Then Killian and Stuart decided to chase each other and play fight. They had a blast.

Later in the evening a hummingbird was hanging around the feeder so I grabbed my camera and ran upstairs to my bedroom balcony for a better view and was so excited that he was still buzzing around taking drinks.

The last picture I took today was this little bunny, he has had a few close calls with my dogs, but each time has made it to shelter. I try to look for him before I let the dogs out, but sometimes he’s in a bush or a plant and I don’t see him, so glad he’s fast, I like watching him weed my yard.

Well, I had a great day and now it’s time to watch Master Chef, I love me some Gordan Ramsey. What did I ever do before DVR? Digging that it’s the weekend I need some extra sleep.

We had amazing weather this weekend. I did so much yard work and gardening. I’m sore, tired and hot. Here’s a few of the eats I enjoyed over the weekend.

This is not my first time adding Kale to a smoothie, a while back I did a post called Keeping Up with Kale.  I enjoy adding greens to my smoothie, you get a nice color and it adds a little texture.

Added to my Fitmixer protein powder, makes a nice think shake.

This is my third kale smoothie this week, yummy.

After blending the kale leaves become tiny flecks.

For dinner I used the rest of the kale for Kale Chips. I used my toaster oven, it works great for small batches, if I have a large batch I use the oven.

Kale Chips

  • Preheat oven to about 375*
  • Tear the leaves off the thick stems into bite size pieces. Spread out on baking sheet
  • Drizzle with about 2 tsp of olive oil
  • Season with your favorite spices
  • Bake for about 15 minutes, until edges are brown and kale is crispy
Also roasted up some Tofu and Cauliflower. I love this combo because they can be roasted at the same time. 425* for 25 minutes. We also had a side of Udon noodles.

We ate dinner on the deck again tonight, I love dining outdoors, plus I wanted to take in all the work I had done, I love doing yard work and gardening. I am really excited to pick out all my annual flowers for pots which I plan on planting over the Memorial Day Holiday.  I will be posting a lot of  flower pictures this summer.

Okay, I think I am addicted to Boot Camps, first there was Tina’s Best Body Boot Camp, then the Boot Camp at the Blend Retreat and now the Fitmixer Boot Camp.  I love organized workout groups, it keeps me motivated and I really look forward to the daily tasks.

So with the Boot Camp I have been introduced to amino’s, well I am excited about this because I really get sore after workouts and the amino’s are supposed to help repair muscle tissue and recover faster.

The entire Boot Camp package looks like this. This will take me through the entire 12 week program.

These are some of the samples I received from the Blend retreat.

The amino’s taste so good, I love the grape flavor.

Along with the powder supplements they also have a healthy diet plan that is designed specifically for each participant from a registered dietitian. Here is my breakfast and lunch. I love to prep my snacks and meals, it keeps me on task and allows more time to concentrate on the workouts. That’s one thing with Boot Camps some of the workouts and moves I am not familiar with, so they usually have videos showing all the moves and proper execution. So I usually watch the video in full, and then I do the workouts. So that can eat up a lot of time, but worth it when you find a new favorite exercise.

After work I head home and get right on my workout’s.

The first day we had a Fit test to complete. The test gauges us at the start of the program and will be repeated mid Boot Camp and then at the end, this will show us how we progressed through the program. My weak area is and has always been my core. I also see from the test that I need to work on my triceps strength. I like that each evening we get our next days workout, a motivational thought, and a nutrition tip of the day. They also have snack suggestions and recipes. So much support is available. Plus on Thursday evenings we have a group conference call. Looking forward to my first call tonight.

Then it’s off to make dinner. I plan on keeping it clean and simple, a lean protein, a hearty carbohydrate and a vegetable, plus the plan even suggests a dinner roll. Love that.

So this past week-end I attended the Blend Retreat. It was the highlight of my year so far. I had an amazing time. I met so many amazing ladies. It was really fun being a part of the First Annual Blend Retreat.

It was held in Boulder Colorado at Chautauqua Park.

I had great roommates, Katie at Talk Less, Say More and Amanda at Diary of a Semi-Health Nut.

We had this super cute cottage.

All the rooms were cozy and rustic.

  

Then there was the view off the back porch.

Once I arrived I was greeted by our hosts Lindsay, Katie and Janetha.

Also received my Big Bag of Swag. There was some really Amazing stuff in this bag. I think I will dedicate a post to the swag bag. I really want to cover all the goodies we received. There are some very generous companies that showed us bloggers some serious love and I’d like to do the same in return for them.

After we settled in to our cabin and got to know one another a bit, we headed to the dining hall for a meet and greet cocktail hour followed by dinner and dessert. This gave us an opportunity meet fellow bloggers.

  

The table was loaded with some of my favorite bloggers.

Had some cupcakes from Street Fare.

They were so beautiful and taste.

There was a mad rush for the cupcakes when dinner was over, we each got to choose 3 mini cupcakes, I choose the Raspberry Lavender, S’mor, and Peanut Butter Pretzel. Absolutely loved the Raspberry Lavender.

Saturday morning at 7am, we had Boot Camp.

I was really excited to meet my Best Body Boot Camp instructor Tina.

Tina and Lindsay lead the Boot Camp on Saturday morning. It was so much fun.

So far this post covers Friday evening through Saturday morning breakfast. I really wanted to break up the post into three parts due to how detailed this trip really was. Plus it’s difficult to cram an entire week-end into one post.
