Started Monday off with a creamy batch of OIAJ. This is becoming a habit for me, I just can’t get enough oatmeal lately. It’s funny I went through the entire winter stuck on Chobani yogurt topped with cereal, and then it starts to get warm out and I start eating a hot oatmeal breakfast.

I then gave the babies some love. My Killian is getting to be an old boy, he is 14 now and he is getting lumpy, the vet told me that they are just fatty tumors, but some of them are getting quite big. He still acts like a young dog, so that’s a good thing.

I just love there little faces, they make my heart melt. Stuart loves to give kisses and who am I to turn one down.

I found this amazing recipe over at Around The Plate, and knew I had to make it.

Recipe: Roasted Cauliflower with Feta

Ingredients: 

1 large head of Cauliflower
3 Tbsp Extra Virgin Olive Oil
4 oz. Feta cheese, crumbled
2 cloves Garlic, chopped
Cumin, to taste
Sea Salt, to taste
Rosemary, to taste
Thyme, to taste

Directions: 

1. Preheat the oven to 400 degrees F.
2. Separate the cauliflower florets and place in a bowl. Add the Extra Virgin Olive Oil, Garlic, Cumin and Sea Salt to the Cauliflower. Toss lightly.
3. Place the cauliflower on a sheet pan in a single layer and place in the oven for 15-20 minutes or until the cauliflower browns on the edges.
4. Remove the cauliflower and place back in the bowl. Add the feta cheese, rosemary and thyme. Mix together.
5. Place the cauliflower and feta back on the sheet pan. Cook for an additional 5 minutes or until cheese is melted.
6. Serve and enjoy!

I upheld the Meatless Monday tradition here at my house and made tofu with noodles and cauliflower for dinner with a dose of fresh cucumbers mixed in.

Last week I picked up the pre-cubed package of tofu. I thought it would save time, but I must say I will stick to the block next time, I didn’t consider how I was going to press out the liquid.

The little cubes also shrunk up quite a bit, but they tasted amazing. I marinated them with 1/3 cup of soy sauce, 1/3 cup of lime juice and 2 tablespoons of oil. I baked on 400 degrees of 15 minutes.

I also boiled up a batch of  Nasoya Japanese noodles.

I just love a big plate of noodles.

After they boiled I rinsed in cold water and then tossed with soy sauce, rice vinegar and touch of oil. I also have a shaker of  seaweed and sesame seeds that I season to taste. You can make cook up the noodles a day in advance, they really soak up all the flavor overnight.

I just layered on some fresh cucumbers, the tofu and the cauliflower with feta.

I really loved the flavor the feta cheese added to the entire dish, I will make this again.

Boot Camp Update: I am really digging the workouts and making progress, I honestly don’t think I have ever been this motivated to workout.

I have also started to add Planking into my everyday workout. I found some motivation from my friend over at Life’s Little Bits. I will be joining her for a daily Plank with her Plank Club. Just start where you are with your first Plank and add 5 seconds to your time every day! Fun right.

Here are the Rules:

1st Rule: You can talk about Plank Club.
2nd Rule: You can talk about Plank Club.
3rd Rule: If your butt drops or raises during the plank, the plank is OVER.
4th Rule: No limits on how many people can plank.
5th Rule: Perfect plank form must be observed at all times.
6th Rule: Wear whatever you feel like, plank naked if you must.
7th Rule: Planks will go on as long as your muscles can handle it.
8th Rule: If you join PLANK CLUB, you HAVE to PLANK.

Ouch

So I had an accident in my kitchen last night, it really upset me and kinda scared the heck out of me. My cooking spray is in the cabinet above my stove and when I went to reach for it to spray a pan to heat up some tortillas, it slipped and it hit my Glass Stove top and smashed it. I was sick instantly. After I had a pity party, I went online to see if I could get a replacement piece, I realized that they are about $350.00. So I guess I’m going to get a new stove. That is what makes me so mad about this I broke something that should break on its own. So I’m on the hunt for a new stove.

I can still use the two right burners and the stove, so I’m really glad about that, but to prevent it from happening again, I will be moving my cooking spray. Lesson Learned.

Meatless Monday is here, and I tried a new recipe tonight. I used a basic lasagna recipe and replaced the ricotta with tofu. I really love cheese and I really love tofu so this recipe was a winner.

Tofu Lasagna

Just a few ingredients is all that is needed for this dish.

  • 1 Jar Pasta Sauce
  • 6 No Bake Lasagna Pasta Noodles
  • 1 Tofu Brick, drained and crumbled
  • 1 Bag Frozen Spinach
  • Mozzarella Cheese Ball Sliced or Shredded
Pasta sauce lines the bottom of the 9×9 pan, then I added 2 strips of no bake noodles. Then add the crumbled tofu and a thin layer of spinach. To top off that layer I used 4 or 5 thin slices of the mozzarella ball, but you can shredded cheese if you prefer, then repeat all layers 2 more times. I like to use a 9×9 pan because it’s just enough for two meals. If I’m feeding more people I just use a 13×9 pan and double the ingredients. That’s the great thing about lasagna, you can add as many layers as you want and change it to add different ingredients.

With a side of baked kale chips and a slice of garlic cheese bread, this meatless Monday was a hit.

Kale chips are a favorite of mine, I love the way they crisp up and add texture to a meal. I toss them with olive oil and salt and pepper. Bake on 350 degree for 12 minutes.

Today I completed 45 minutes on the elliptical. I was crunched for time tonight. I wanted to do some weights today, but I will have more time to get that done tomorrow.

Today I’m really excited, almost giddy. Starting this blog has really got my creative juices flowing.  My mind is running over ideas, recipes, photos, and things I want to post and discuss, even though I feel like I’m fumbling through it. It’s like that with everything I guess, being unfamiliar with the set-up, possibilities and the language of a new program.

I love Mondays, to me it’s like starting fresh, don’t get me wrong weekends rule no doubt about it, I love sleeping in and hanging out in my pj’s all day if I want,  but I also need and crave the structure that the work week holds for me.

After work I got home and did 45 minutes on the elliptical, then went right into my new favorite workout. I’m kinda obsessed with it, and you can do it anywhere. I found it on http://www.toneitup.com it’s a site you must visit, they have tons of circuits and workout ideas, they also have a Bikini Blast Program you can follow and they give motivation, support and videos of their workouts.

LEAN-LEGS Pyramid

Do this in your living room, at the gym, in school, at the office

  • 20 Squats
  • 30 Lunges
  • 40 Toe touches (head forward, legs straight, bend down & touch your toes)
  • 50 Second wall sit (sit up against a wall, legs at 90 degrees and hold it!)
  • 100 Seconds jumping jacks
  • 50 Second wall sit
  • 40 Toe touches
  • 30 Lunges
  • 20 Squats
The first time I did this I wished I would have stretched out better, I had really sore hamstrings for a few days, but I loved it. I also added a set of 10 Burpess, also loving.
Today is also Meatless Monday, which happens to be my favorite meal right now. Soy-Lime Roasted Tofu with Roasted Broccoli and Asian Thai Noodles, I’m so glad my husband loves any and all foods because I make this a lot.

Nasoya Tofu

The Tofu Press is amazing, it rids the tofu of all the excess water it’s packed in, so you can marinate it and really get the flavor to absorb in the tofu, I also use it to press out the water in spinach after I thaw it.

Flavor with this;

Marinate for 1-4 hours

and then eat.

Meatless Monday - Dinner is Done

Soy-Lime Roasted Tofu

INGREDIENTS

  • 1 14-ounce package extra-firm, water-packed tofu, drained
  • 1/3 cup reduced-sodium soy sauce
  • 1/3 cup lime juice
  • 3 tablespoons toasted sesame oil

PREPARATION

  1. Pat tofu dry. Combine soy sauce, lime juice and oil in a medium shallow dish. Add the tofu block. Marinate in the refrigerator for 1 hour or up to 4 hours, gently stirring once or twice.
  2. Preheat oven to 450°F.
  3. Remove the tofu from the marinade (discard marinade). Slice into long slices and place on a large baking sheet, making sure the slices are not touching. Roast, gently turning halfway through, until golden brown, about 20 minutes

Beverage of Choice

I roast the broccoli on 425°F  for 20 minutes, I add a little canola oil and shake on a favorite spice, today I use the following;

Nori and Seaweed

I found these at Whole Foods and I use them on lots of  foods like you would any other spice.

Tuesdays Breakfast and Lunch Bag

I have a tuna wrap in the tinfoil, which I’ll unwrap and add the lettuce I have bagged up when I’m ready to eat!
