Trying to keep dinner’s fun and healthy is something I enjoy doing. I like to spend time looking at recipes and planning meals. I always try to have balanced meals. One way I balance meals is to always include a vegetable and a grain or bread with a protein. Over the years I have learned how I like to eat and prepare vegetables.  One thing I can not stand is when you go to a restaurant and get a side of vegetables that are limb and soaked in butter, yuck. I love to roast vegetables with a little oil and seasoned with salt and pepper. For me that’s perfection.

Sweet potatoes to me are a root vegetable that is hands down a true winner all by itself. Sweet, hearty and good for you, sign me up for some Wedged Sweet Eats.

I went with a wedge cut on these three beauties.

After I wedged them I put them in a ziplock bag and added salt, pepper and olive oil and shook them up in the bag to coat all the wedges.

I also added another pinch or two of a really coarse sea salt to the top before putting them in the oven. I roasted them on 425 degrees for 30 minutes. The skin and the top of the wedges come out crispy with a salty bite and on the inside they are soft and sweet.

Made an easy side dish of pearled couscous with a basil and herb seasoning. I really liked it you could really taste the basil.

These pearled couscous were huge compared to the standard couscous.

Picked up these Seafood Stuffed Salmon steak’s at Sam’s Club while I was picking up some paper products. I warned myself before I went in that I was only getting paper products, but clearly that did not happen, and I am so glad. These were amazing. My husband ate two of them. I had one and saved one to take to work for lunch.

I was so excited to see how these tasted.

I have seen these in the seafood area of Sam’s Club before but always passed them by. I will be getting these again, for $12.00 it was a great deal on something that we both loved.

This meal reminds me of a post I did a while back about being an Orange Eater. I think color has so much to do with the foods we eat and the foods we find more appealing than others.

I am drawn to Green Foods like: Kale, Spinach, Pea’s, Avocados, Cucumbers, Broccoli, Asparagus. Orange Foods like: Pumpkin, Sweet Potatoes, Salmon, Carrots, Papaya. Red Foods like: Apples, Strawberries, Cherries, Watermelons, Raspberries.  

No let’s get Physical.

Boot Camp Update: During Boot Camp, Tina  included Modified Options for all the exercises in case it was too much of a challenge for your fitness level, and for those who needed more of a challenge she include an Increased Challenge Option, and for those without gym memberships like myself there was an At Home Option. I used all the options at one time or another during these past 6 weeks.

One thing that has been the best aid during the Boot Camp has been the links to each exercise. This has been so helpful. Having it explained so clearly or to have an actual video showing proper movements has made it easy and fun to tackle all the new exercises.

Plank Club Update: I have been holding a 42 second Plank and doing it at least 3 times per day. In addition to the Standard Plank, I started adding the Reverse Plank.

Yesterday was a really big day for me, I pulled out the grill, and I had a blast Getting My Grill On. I really missed my grill over the long winter, it is the only grill that I have ever been brave enough to start on my own. Let me explain, I had an incident when I was 16 years old lighting a grill. I made the mistake of having my face to close to the grill and as I dropped the match to light the flame and it sent a puff of flame straight up at me, and I ended up singeing my bangs and my eyebrows.  I have been afraid of grills ever since, but that all changed with a new grill purchase last spring.

Greek food is a favorite of mine and I just love Chicken Gyros. I really love the fresh flavors from the cucumber and yogurt sauce that is called Tzatziki.

I Grilled up some broccoli. That is my favorite way to prepare my vegetables during grilling season. I just make sure I toss the veggie with olive oil and use cooking spray on the pan I am using to prevent the vegetables from burning or drying out.

Here’s my Grill, she’s a beauty, I just love her. It’s so nice to have an electric start on a grill, nothing to light, no way to singe your hair, and it’s a perfect size, with 2 shelves.

Perfect for grilling your veggies and cooking your meal at the same time. I have even cooked french fries on the top rack using my toaster oven tray. We had a power outage last year for over a week (in August) and I made all our meals on the grill. It was fun and I looked at it as an adventure and I found that I learned so much about cooking that week. I really got creative.

Made a Simple Tzatziki Sauce.

  • 1/2 – Cucumber deseeded, and Chopped
  • 1 – Small Container Plain Greek Yogurt
  • Diced Garlic to Taste
  • Processed in a Food Processor until Incorporated

It came out smooth and creamy. I love the slight bitter flavor you get from the yogurt. I think you could put this on anything, I am going to use my left over sauce as a salad dressing. I will let you know.

Once the chicken is done grilling I let it rest for about 3 minutes then slice and dice into strips or chunks.

The broccoli cooked the entire time the chicken did and it was done perfectly. I kept the grill on medium the entire time.

Once I took off the chicken and broccoli I put the flat bread on the top rack for a minute on each side to warm.

Loaded the pita up with chicken, spooned on some of the Tzatziki sauce and topped with some feta cheese. I only wish I had some tomatoes to top it off with.

It was a really easy meal to make and I had a good time Getting My Grill On. Plus I am all for the easy cleanup in the kitchen, which leaves me with more time to spend with my guys.

Boot Camp Update: Feeling really sore today and in lots of places. Upper chest is sore, hamstrings are really sore and my inner thighs are super sore. So I have been trying to get up from my desk and stretch throughout the day.

Plank Club Update: Had a set back this week in my Planking time, for some reason I have not been able to hold a Plank longer than 35 seconds, so I have been doing several throughout the day. It’s a work in progress.

I’m attending Blend Retreat 2012.

Some weekends I like to indulge in a fun breakfast, but don’t feel like pulling out all my cookware and making a mess, so I have a Sweet and Fun Go To breakfast.

These French Toast Sticks come  packaged as a full slice with perforations to pull apart to sticks, but I leave them intact and make a sandwich out of them. I have about 4 boxes of these left in my freezer. The Kroger’s I shop at had them on closeout for $1.96 a box, and I cannot pass up on a great deal like that.

On a recent shopping trip Saving = More, I found this Peter Pan whipped creamy peanut butter, so I thought it would be perfect for the filling in my french toast sandwich. I also sliced a banana and added some fresh blackberries.

Here’s how my husband had his, he didn’t want to mess with spreads and berries, he went for the banana and maple syrup.

Here’s how my plate turned out. The whipped peanut butter has less sugar and was very easy to spread, I really only needed 1 tablespoon to cover both slices, added the berries and banana slices and a little love from my favorite Chia Seeds.

Smashed it together, and  here you have my Sweet and Fun Go To breakfast. I am happy to report that nothing squeezed it’s way out this sandwich, everything stayed in place thanks to the Whipped Peanut Butter.

BEST BODY BOOTCAMP

Boot Camp Update: We just entered Week #5 of Boot Camp and I am really feeling the benefits of it. I can tell I am able to do higher resistances on my elliptical for longer periods of time, and I have an amazing amount of energy. I also noticed that my back has not been bothering me as much, I normally have aches and pains in my lower back and I think the strength training has helped improve my back’s strength. I have been developing better sleeping habits, and have been Planking daily.

One of the side challenges to Boot Camp is each week we can pick two new goals to work on during Boot Camp: Example – drink more water, stretch before workouts, etc… Well I have been doing a Bed Time Goal the entire time and have only missed it one time, I am in bed by 11 p.m. and I feel better and more awake in the morning! I really have been loving Boot Camp it’s been the motivation I needed to get into Health Workout Routine that is challenging.

I will be joining the next Boot Camp when Tina has one, she has a real gift for kicking you in the pants, and that’s a Good Thing.

I can Barley Contain Myself. Sorry, sometimes wordplay makes me think I’m clever. Well anyway I made a great batch of Barley as a side dish for our dinner and I have to say it really has a unique flavor. I have had barley in soup and mixed in with other grains, but I have never had it alone, so I was excited to try it out.

1 cup of barley to 3 cups of water with a vegetable broth packet for a little added flavor. Bring to a boil and simmer for 50 minutes.

This little grains packs 6 grams of fiber and 4 grams of protein in each serving which is 1 cup.

Barley really plumps up, so 1 cup of raw barley is more than enough to make 2 large servings.

They come out chewy and nutty. I love the texture of this grain, so hearty and filling.

we also had Sweet Potato Discs drizzled with olive oil and seasoned with salt. Baked at 400 degrees for 40 minutes or until crispy on the edges.

Made a basic baked pork chop, breaded in Panko bread crumbs and seasoned with garlic salt’s, I used liquid egg whites for the egg wash. Just a nice and light breading.

Pan fried for 5 minutes to brown the meat, then baked in the oven on 400 degrees for 40 minutes, I baked the Sweet Potato Discs and Pork Chops together.

This meal made my husband very happy, he loves a good chop. I am not vegetarian, but I do prefer a plant-based diet. It seems like I eat meat less and less and when I do I am always wishing I had a second vegetable on my plate instead of the meat.

For dessert I thawed a few Protein Pumpkin Cookies. I love these little babies, they really satisfy a sweet tooth.

Just after eating the cookies I noticed this lone pear that needed to be eaten tonight or I’d be feeding it to the Lovely Ladies on the Farm. So I sliced it up and Jeff and I ate that also.

This pear was super ripe and was super juicy. I loved every single bite.

When I took my first bite, I told my husband it was Peeaarrfect! He responded, “Your such a dork.” He could Barley stand my comedic genius.

BEST BODY BOOTCAMP

Boot Camp is rolling on, even on vacation I made Boot Camp work for me, I was only gone 4 days and my friend’s apartment had a very nice gym. So before the day got started I would dash to the gym and complete a workout. I put the workouts on large index cards and laminated them so I would have them handy on my trip. Plus Tina has the program set up to be flexible.

On top of the workout’s I also got lots of extra cardio, we walked a few miles on the Allure Cruise Ship Tour, and we swan and went fishing. The fishing was a really big core and arm workout, the waves were rolling so anytime you stood up to reel in your catch you really engaged your core. Well I count it as extra!

Plank Club is going strong, I even got my friends and husband to do them with me, it was really fun. I managed to hold my Plank for 55 seconds each day, so I am happy to be holding steady, but I hope to make a break through any day now. I love how my husband can take months off from working out and just jump in and kill it. If I take anytime off from working out I lose strength.

Modified Moves

Nothing fancy on today’s menu. Yogurt and cereal and an apple for breakfast.

Lunch was a Meatless BBQ skewer on a whole wheat pita, an egg and a piece of string cheese. I also had a bag of pretzels.

Can I just say yum-o on these skewers. I am in love, plus they have 19 grams of protein.

Plank Club

I had a break through on my Plank time, I went to 52 seconds. I know 2 seconds is not a big deal, but it’s an improvement and I’ll take it. Do you want to join the Plank Club, well here’s the details.

1st Rule: You can talk about Plank Club.
2nd Rule: You can talk about Plank Club.
3rd Rule: If your butt drops or raises during the plank, the plank is OVER.
4th Rule: No limits on how many people can plank.
5th Rule: Perfect plank form must be observed at all times.
6th Rule: Wear whatever you feel like, plank naked if you must.
7th Rule: Planks will go on as long as your muscles can handle it.
8th Rule: If you join PLANK CLUB, you HAVE to PLANK.

Boot Camp

Mondays workout involved a Lower Body Superset. Can I just say this, SUPERSET are SUPER crazy.  One exercise in particular was the Surrender Squat, it really had me scared. I really had to think about doing this move, I normally don’t have issues keeping my balance, but I really had to check myself a few times, plus it was really hurting my knee’s, I bruise easy. So after a set I decided I was not comfortable doing this exercise so luckily Tina included Modified Moves so I chose to do the modified version, which is a Reverse Lunge with hand weights. That was much easier on me.

Ever since I can remember I have been eating Corned Beef and Cabbage on St. Patty’s Day. My mom took her corned beef dinner very serious. My parents would head to Down Town Detroit and go to Eastern Market to pick out a nice flat beef cut brisket.

So when I got married I continued the Tradition of a Corned Beef with Cabbage meal for St. Patty’s day weekend. Although I rely on my local Kroger’s for my corn beef, I still take this meal very serious. So you can imagine my surprise when I found the brand that my parents use to buy, from Detroit Michigan. Score. I love supporting my State.

 

How easy can this meal be, boil in a pot for 2-1/2 hours and then eat. I used a Dark Guinness, some water and the spice pack.

 

Vegetables on the menu, cabbage, carrots and red skin potatoes.

 

With an hours left on the Corned Beef cook time I added the potatoes and the carrots. Once they were cooked properly I removed the meat and the veggies, added some more water and boiled the cabbage  for 20 minutes.

 

Then I made and plate, and ate every bit of food on the plate.

I love Tradition. Now I have dinner for the next two days or so.

Plank Club Update: I am sitting solid with my 50 second plank, I have not been able to add-on to the time without breaking my form, so I will continue to do daily planks and hope that in time I will get stronger and be able to add-on to the time.

Best Body Boot Camp Update: Today was a rest day. I reviewed my Week #3 and Week #4 schedule that Tina sent out and I am ready to head into Week #3.  Looking forward to the challenge that Week #3 will present.

BEST BODY BOOTCAMP

Boot Camp Update, I am really getting into this, I am looking forward to what comes next, not to say that when I’m done, I’m not exhausted, starving and a bit sore, I am, but first and foremost I am doing it and having fun. I increased my hand weights this week on a few of the exercises.

Work has been crazy for me lately, I have had to work 10 plus hours extra this week alone, but I have made my workouts a priority. I tried to make a few meals in advance so that I could save time on the nights our Boot Camp took me longer to complete. Monday was a hectic day for me, I worked late, got home, I made my husband dinner, went and worked out, prepped my breakfast and lunch for the next day, then I finally sat down to eat my dinner at 7:30pm, but it was worth it. I took care of everyone including my self, and I didn’t make Any Excuses.

I had a nice glass of this Silk fruit and protein smoothie after my workout, it was just what I needed to give me a little boost. I loved the mango flavor, it was really taste.

Plank Club, I rocked a  50 second plank. That is a really good time for me, I am working on improving that time, but I am really happy starting with that as a base line, just 6 short months ago during a yoga class I could barely hole 30 seconds without violently shaking.

Dinner was one that I could put together in about 15 minutes, I love taco’s and I love shrimp, so we had Shrimp Taco’s.

Quick and easy was the theme here.

 

One of my favorite taco topping is guacamole and the little wholly guacamole packs are the best to just squeeze on. Plus they can be kept in the freezer and they thaw in minutes in a bowl of water, so I always have them on hand.

I know refried beans are not the prettiest to photograph, but I love them.
